Pie Topping for Pumpkin pie

pour butter, sugar & pecans on top of pie and run under broiler
- melted butter
- brown sugar
- chopped pecans
- ready-made pumpkin pie
Hot Fruit Casserole

Layer or combine fruit in casserole dish Melt butter add sugar and curry powder or allspice and pour over fruit
- 1 can pineapple chunks (or 8oz fresh pineapple)
- 1 can peaches (or 4 medium peaches)
- 1 can pears (or 4 medium pears)
- 1 can apricot halves (or 10 medium apricots)
- 6 oz. bottle cherries, if desired
- 1/2 cup butter (I used less)
- 1 cup light brown sugar
- 2 1/2 tsp curry powder (I used 1 tsp), if desired
- can substitute allspice
Spinach with Nutmeg

Clean and cut spinach leaves
- 1 pound spinach in bult or 1 10 oz plastic pkg
- 2 T butter
- Salt, if desires
- Freshly ground pepper to taste
- 1/4 tsp freshly grated nutmeg

- 1/2 cup all- purpose flour
- 1/8 t salt
- 3 T Italian-seasoned breadcrumbs
- 3 T preshredded fresh Parmesan cheese
- 1/4 t black pepper
- 1 large egg white, slightly beaten
- 4 (4 oz) boneless center-cut pork chops (1/2 inch thick)
- 2 t olive oil
- 1/2 cup chicken broth
- 1 T dry white wine
- 1/2 t grated lemon rind
- 1 T fresh lemon juice
- 2 t capers, rinsed and drained
Tuna Ball

Mix together & chill
- 1 CAN TUNA (DRAINED & FLAKED)
- 8 OZ CREAM CHEESE SOFTENED
- 1 TAB LEMON JUICE
- 2 TSP ONION
- 1 TAB HORSERADISH

- 4 cups sugar
- 1/2 cup vinegar
- 1/2 teaspoon ground doves
- 2 teaspoons cinnamon
- 1/2 teaspoon allspice
Artichoke Rice Salad

Drain artichoke hearts and halve
- 1 box chicken flavored rice-a-roni - make according to directions (I did use half water and half chicken stock as the liquid)
- 4 green onions thinly sliced
- 1 red or yellow or orange pepper chopped (if you like peppers go ahead and use two!)
- 12 pimento stuffed olives-sliced
- 2 6 oz. jars of marinated artichoke hearts
- 1 t. curry powder
- 1/2 c. mayo
- (optional- 3 chicken breasts cooked and chopped)
Scalloped Potatoes

Preheat oven to 350°. Melt butter in a Dutch oven over medium-high heat
- 2 teaspoons butter
- 1 medium onion (about 5 1/2 ounces), thinly sliced
- 3 garlic cloves, minced
- 4 cups 2% reduced-fat milk
- 1 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 3 ounces all-purpose flour (about 2/3 cup)
- 6 ounces shredded sharp cheddar cheese (1 1/2 cups), divided
- 6 ounces diced ham (about 1 1/4 cups)
- 3 pounds peeled baking potatoes, cut into 1/8-inch-thick slices

- 1 box lemon jello
- 1 tablespoon vinegar
- 1 cup finely chopped celery
- Salt/pepper to taste
