Italian Mac-n-Cheese

Bring a large pot of water to a boil
- 1 pound penne rigate
- 1 pound Italian bulk sweet sausage
- 2 tbls extra-virgin olive oil
- 1 tbls butter
- 3 or 4 cloves garlic, chopped
- 12 crimini mushrooms, sliced
- Salt
- Pepper
- 2 tbls all-purpose flour
- 1 cup chicken stock
- 1 cup heavy cream
- 1 (10-ounce)sack, 2 1/2 cups, shredded Italian 4 cheese blend.
- 1 can diced tomatoes, drained well
- 1 teaspoon hot sauce(recommended:Tabasco)
- 1/2 cup parmesan, a couple of handfuls
Chicken Enchiladas

Combine all ingredients all ingredients in a bowl
- Flour tortillas
- Cooked chicken
- 1 can of chicken soup
- 1 chopped onion
- 4 oz jar slice mushroom
- 1 cup sour cream
- 2 cups Monterrey jack cheese
Barbeque Roasted Potatoes

Preheat grill to medium heat
- 3 tablespoons olive oil
- 2 tablespoons barbeque seasoning.
- 1 tablespoon crushed garlic
- 1 1/2 pounds baby white potatoes, quartered
Shrimp Versailles

Cook pasta, drain and keep warm
- 12 oz angel hair pasta
- 4 green onions
- 3 tbls butter, melted
- 2 lbs shrimp (90-100/lb)
- 1 8oz pkg cream cheese, cubed
- 1/4 cup milk
- 1/2 cup shredded swiss cheese
- 1/4 cup white wine
- ground pepper
- 1/4 cup fine bread crumbs
- 2 tbls butter, melted
Steakhouse Shepherd's Pie

Place potatoes in a pot, cover with cold water and bring up to a boil
- 2 pounds Idaho potatoes, peeled and cut into chunks
- Salt
- 1/2 tablespoons extra-virgin olive oil
- 4 slices good quality bacon or peppered bacon, chopped
- 2 pounds ground sirloin
- 1 onion, chopped
- 1/2 pound button mushrooms, quartered
- Black pepper
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 1/2 cups beef stock
- 2 tablespoons Worcestershire sauce
- 1 egg yolk
- 3 tablespoons sour cream
- 1/2 pound blue cheese, crumbled (recommended: Maytag)
- 3 to 4 tablespoons chives
- 1 teaspoon paprika
Crock-Pot Pork Loin Roast with Potatoes

I sprayed lightly with Pam Wash, scrub and slice potatoes
- 2 Pounds Pork Loin Roast
- 4 Potatoes (I use Russet)
- 1 Package of Lipton Savory Herby with Garlic Mix
- 1 10z Can of Cream of Celery Soup
- 2 Stalks of Celery
- 2 Green Onions
- 1 Cup of Water
- Cooked Rice (optional)
Pulled Chicken

1. Stir together all sauce ingredients in a 5-6 qt slow cooker
- Ingredients for Slow Cooker Shredded Chicken:
- 3 lbs (about 5-6 count) boneless, skinless chicken breasts, trimmed of fat
- 1 1/2 cups BBQ Sauce (I used Sweet Baby Rays Honey BBQ)
- 1/2 medium onion, grated (with juice)
- 1 Tbsp olive oil
- 1 Tbsp worchestershire sauce
- 2 Tbsp brown sugar
Chicken Noodle Bake

Cook noodles according to package directions and drain
- 8 ounces egg noodles, uncooked
- 1/2 cup butter (8 ounces)
- 1 cup sliced mushrooms, about 4 ounces
- 1/3 cup flour
- 2 cups chicken broth
- 1 cup milk
- 1/4 cup pimiento, chopped (2 ounce jar, drained)
- 2 teaspoons salt
- 1/2 teaspoon pepper
- 2 cups cooked diced chicken
- 1/3 cup grated Parmesan cheese
Barbeque Roasted Potatoes Sauce

Combine all ingredients in a small bowl
- 1 cup sour cream
- 2 tablespoons crumbled bacon
- 1 tablespoon Worcestershire sauce
- 1 tablespoon dried chives
- 1 tablespoon hot sauce
Cedar Plank Salmon

Soak cedar plank in salted water for 2 hours, then drain
- 1 cedar plank (6 by 14 inches)
- 2 salmon fillets (1 1/2 pounds total)
- Salt and freshly ground black pepper
- 6 tablespoons Dijon mustard
- 6 tablespoons brown sugar
