Chicken Thai Pizza

Preheat oven to 425 degrees Spread duck sauce over crust
- 1 pizza dough
- 1/2 cup duck sauce
- 1/2 teaspoon crushed red pepper flakes
- 1 package(2cups) shredded provolone or Monterrey Jack cheese
- 1/2 red bell pepper, thinly sliced
- 1 tablespoon vegetable oil
- 2 tablespoons soy sauce
- 1 rounded tablespoonful of peanut butter
- 2 teaspoon hot sauce
- 2 teaspoons grill seasoning
- 4 chicken breast cutlets, 1/2 pound
- 2 tablespoons honey
- 2 tablespoons rice wine vinegar or cider vinegar
- 1/4 seedless cucumber
- 4 scallions chopped
- 1 cup bean spouts, a couple of handfuls
- Palm full of cilantro leaves,chopped
- 1/4 cup chopped peanuts, 2 ounces
Scallops with bacon and spinach

1. Cook bacon in a large cast-iron skillet over medium-high heat until crisp
- 3 center-cut bacon slices
- 1 1/2 pounds jumbo sea scallops (about 12)
- 1/4 teaspoon plus 1/8 teaspoon kosher salt, divided
- 1/4 teaspoon freshly ground black pepper, divided
- 1 cup chopped onion
- 6 garlic cloves, sliced
- 12 ounces fresh baby spinach
- 4 lemon wedges (optional)
Chicken & Sausage Jambalaya

Cut chicken and sausage into bite size pieces and season with peppers
- 1 pkg hilshire farm sausage
- 4-5 boned, skinned chicken breasts
- oil free italian dressing
- 1 package celery, chopped
- 3 onions, chopped
- 2 bunches green onions
- 2 bell peppers, chopped
- 2 cans clear chicken broth (3 cups)
- 1 1/2 cups long grain rice
- 4 cloves garlic, minced
- Cayenne and black pepper
Rotisserie Tequila Turkey Breast

How to make it Mix all marinade ingredients in a 2 gallon plastic ziplock bag
- 8 pounds turkey breast
- 1/3 cup honey
- 1 package taco seasoning mix
- 1/2 cup lime juice
- 1/4 cup olive oil
- 1 cup tequila
- 2 tablespoons jalapeno chile peppers, finely chopped
Lobster Mac and Cheese

Drizzle oil into pot of boiling salted water
- Kosher salt
- Vegetable oil
- 1 lb cavatappi or mezze penne pasta
- 1 qt milk
- 1 stick butter, divided
- 1/2 cup flour
- 12 oz gruyere cheese, grated
- 8 oz sharp cheddar cheese grated
- 1/2 tsp pepper
- 1/2 tsp nutmeg
- 1 1/2 lbs lobster(or crawfish,shrimp)
- 1 1/2 cups white bread crumbs
Sausage, Pepper and Onion pasta Fake Bake

Place a pot of water on the stove to boil for pasta
- 1 pound rigatoni
- Salt
- 1 pound cooked chicken sausages
- 3 tablespoons extra-virgin olive oil, divided
- 1 green or red bell pepper, seeded and sliced
- 1 cubanelle pepper, seeded and sliced
- 1 large onion, thinly sliced
- 3 to 4 cloves garlic, chopped
- Ground black pepper
- 1/2 cup dry white wine or chicken stock, a couple of glugs
- 1 (28 ounce) can crushed tomatoes
- Handful chopped flat-leaf parsley
- 1/2 cup fresh basil, 10 leaves, torn or shredded
- 1 cup ricotta cheese
- 1 cup freshly grated Parmigiano-Reggiano, plus some to pass at table

- 1 (15 ounce) can artichoke hearts, drained and chopped
- 3/4 cup grated Parmesan cheese
- 3/4 cup mayonnaise
- 1 pinch garlic pepper
- 4 skinless, boneless chicken breast halves
Corn Bread and Sausage Stuffing

- 1 lb sweet italian sausage, casing
- removed
- 6 tbls butter
- 3 stalks celery, chopped
- 1 onion, chopped
- 1 1/2 tsp ground sage
- 1 tsp dried thyme
- 3/4 tsp salt
- 3/4 pepper
- 10 cups crumbled corn bread
- 2 large eggs, beaten
- 1-2 cups chicken broth
Chicken Bacon Casserole

1. Cook and crumble bacon
- 4-5 boneless, skinless chicken breasts
- 6 strips of quality bacon – cooked and crumbled
- 2 cans cream of chicken soup
- 2 cups shredded Monterrey Jack cheese
- 1 box (16 ounces) dried spiral pasta
- 1 tablespoon garlic powder
- Salt and pepper to taste
