Poblano Advocado Cheeseburgers

Prepare the grill for direct cooking over medium-high heat (about 400°F)
- 2 large poblano chile peppers
- 1 1/2 pounds ground chuck (80% lean)
- 2 teaspoons finely chopped fresh oregano leaves or 1 teaspoon dried oregano
- 1/4 teaspoon freshly ground black pepper
- Kosher salt
- 4 thin slices Monterey Jack cheese
- 4 seeded hamburger buns, split
- 1 large avocado, mashed
- 4 leaves iceberg lettuce
Buffalo Chicken Burgers

Combine the mayo ingredients, except the celery, and mash well with a fork
- 1/3 cup mayonnaise
- 1/3 cup crumbled blue cheese
- 2 teaspoons cider vinegar
- 1 teaspoon hot pepper sauce
- 1/2 rib celery, cut crosswise into thin slices
- PATTIES
- 1-1/4 pounds ground chicken, preferably thigh meat
- 1/2 cup panko bread crumbs
- 3 tablespoons hot pepper sauce
- 2 tablespoons finely chopped fresh chives
- 1/2 teaspoon kosher salt
- Extra-virgin olive oil
- 4 hamburger buns, split
- 4 large leaves iceberg lettuce, thinly sliced
Chicken Divan

Microwave broccoli on high for 2 minutes, until thawed
- 2 10 oz pkgs chopped frozen broccoli
- 6 cups cooked, shredded chicken
- 2 can cream of mushroom soup
- 1 cup mayonnaise
- 1 cup sour cream
- 1 cup grated cheddar cheese
- 1 tbls lemon juice
- 1 tsp curry powder
- salt
- pepper
- 1/2 cup white wine
- 1/2 cup grated Parmesan
- 1/2 cup bread crumbs
- 2 tbls butter, melted
Taco Soup

Mix all together put into big pot and simmer for 45 minutes
- 1 pound browned ground beef
- 1 onion,chopped
- 1 can ranch style beans
- 1 can pinto beans undrained
- 1 can stewed tomatoes undrained
- 1 can Rotel tomatoes
- 1 can water
- 1 pkg. ranch dressing mix
- 1/2 pkg. taco seasoning mix
Marinaded Beef Tenderloin

Place marinade in a dish with tenderloin and marinate 8 hours
- 1 cup soy
- 2/3 cup oil
- 3 tbls brown sugar
- 2 tbls dijon mustard
- 1 tbls white vinegar
- 1 tsp garlic powder
- 1 green onion, chopped

- FOR THE BASIL MUSTARD:
- MARIO BATALI'S SPICY SAUSAGE PROVOLONE BURGERS
- 1 1/2 pounds Spicy Italian Sausage (casing removed)
- 1 1/2 pounds Ground Beef (80/20 blend)
- 2 tablespoons Worcestershire Sauce
- 1 tablespoon Fennel Seeds (toasted and ground)
- 6 slices Provolone Cheese
- Salt to taste
- 6 Hamburger Size Potato Rolls
- 1/4 cup Dijon Mustard
- 2 tablespoons Mayonnaise
- 1/4 cup Basil Leaves (sliced)
- FOR THE SWEETENED CHERRY PEPPER RELISH:
- 1 cup Pickled Cherry Peppers (finely chopped)
- 3 tablespoons Maple Syrup
- 1 tablespoon Extra Virgin Olive Oil
Slow Cooker Winter Pork Roast Dinner

Sprinkle pork roast with 1/2 teaspoon of the salt and the pepper; place in 4- to 5-quart slow cooker
- 1 rolled boneless pork loin roast (1 3/4 to 2 lb)
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 3 large dark-orange sweet potatoes, peeled, thinly sliced
- 1 medium onion, sliced, separated into rings
- 1 1/2 teaspoons dried thyme leaves
- 1 quart (4 cups) apple juice
Garlic Pot Roast

- 1 3 lb boneless beef chuck roast
- 6 cloves garlic, sliced

- pepper
- EVOO
- 1 cup chopped onion
- 1 cup peeled chopped carrots

- 2/3 c water
- red wine
