Ginger Coconut Rice

Melt butter in a large pot with a cover
- 1-1/2 cups jasmine rice, rinsed well
- 1 tablespoon butter
- 1-1/2 teaspoons grated fresh ginger
- 1-1/2 cups water
- 1-1/2 cup coconut milk
- 1 teaspoon grated lime peel
- 1/4 cup cilantro, chopped
Chicken Enchiladas

Preheat oven to 350. Heat olive oil in a skillet over medium heat
- FOR THE ENCHILADAS:
- 2 boneless, skinless chicken breasts, cooked and shredded
- 1/2 a green bell pepper, finely chopped
- 1/2 onion, finely chopped
- 2 Tbsp olive oil
- 1 tsp garlic powder
- salt and pepper to taste
- 2 cups chili gravy (recipe follows)
- 4 flour tortillas (I had enough filling for 5-6 tortillas)
- 1 cup shredded cheddar cheese
- FOR THE CHILI GRAVY:
- 1/4 cup lard (she used vegetable oil and so did I)
- 1/4 cup flour
- 1/2 tsp black pepper
- 1 tsp salt
- 1-1/2 tsp powdered garlic
- 2 tsp ground cumin
- 1/2 tsp dried oregano (Mexican oregano is preferred if it’s available)
- 2 T chili powder
- 2 cups chicken broth (or water)
Easy Chicken & Cheese Enchiladas

1.Heat the oven to 350°F
- 1 can (10 3/4 ounces) Campbell's® Condensed Cream of Chicken Soup (Regular or 98% Fat Free)
- 1/2 cup sour cream
- 1 cup Pace® Picante Sauce
- 2 teaspoons chili powder
- 2 cups chopped cooked chicken
- 1/2 cup shredded Monterey Jack cheese (about 2 ounces)
- 6 flour tortillas (6-inch), warmed
- 1 small tomato, chopped (about 1/2 cup)
- 1 green onion, sliced (about 2 tablespoons)
Southern Style Macaroni & Cheese

Preheat the oven to 350 degrees F
- 1 pound elbow macaroni
- 8 tablespoons butter
- 16 ounces mild cheddar cheese, shredded
- 2 cups half and half
- 2 large eggs, lightly beaten
- salt and pepper to taste
The Famous Crack Dip

- 8 ounce package of cream cheese, softened
- 1/4 cup ranch salad dressing
- 1/4 cup blue cheese salad dressing
- 1/2 cup buffalo sauce or buffalo style barbecue sauce
- 1/2 cup crumbled blue cheese (shredded mozzarella cheese can be substituted)
- 2 chicken breast, shredded
Bourbon Baked Beans

- 2 (15 oz) cans spicy baked beans
- 1/2 cup bourbon
- 2 tablespoons molasses
- 2 teaspoons cider vinegar
- 1 teaspoon salt
- 8 slices bacon, fried crisp and crumbled
Ina Garten's Chicken Piccata

- 2 * 2 split (1 whole) boneless, skinless chicken breasts
- * Kosher salt and freshly ground black pepper
- 1/2 * 1/2 cup all-purpose flour
- 1 * 1 extra-large egg
- 1/2 * 1/2 tablespoon water
- 3/4 * 3/4 cup seasoned dry bread crumbs
- * Good olive oil

Grilled Green Quesadillas with Brie and Herbs

- 4 large spinach flavor flour wraps, available on dairy aisle of larger markets, 12 inch diameter
- 3/4 pound brie with herbs, sliced
- 4 tablespoons chopped fresh chives
- 2 tablespoons chopped fresh tarragon leaves
- Sour cream, optional garnish
- Salsa, optional garnish
Sloppy Joe Casserole

Cook macaroni; prepare sauce and meat (sloppy joe, water, tomato sauce, and paste)
- 1 (8 oz.) pkg. shell macaroni
- 1 (1 1/16 oz.) env. Sloppy Joe seasoning mix
- 1 lb. hamburger
- 1 (6 oz.) can tomato paste
- 1 (8 oz.) can tomato sauce
- 2 (8 oz.) cartons) cottage cheese
- 1/2 c. grated cheddar cheese
