CHILI CON QUESO SECOND RECIPE

Brown hamburger and drain
- 1 lb. hamburger
- 1 small can chopped mild chili peppers, peeled
- 1 can tomatoes chopped and peeled
- 1 lb. Velveeta cheese
- 2 tablespoons flour
- 1/2 teaspoon Worcestershire sauce
- Chili powder
FRIED NOODLES WITH CHICKEN AND VEGETABLES

Divide noodles into four portions
- 1/2 lb. fresh egg noodles
- Oil for frying
- 1 whole chicken breast, skinned and boned
- 1/2 lb. uncooked shrimp, peeled
- 1 clove garlic, crushed
- 1 piece bamboo shoot, shredded
- 6 Chinese mushrooms, soaked in warm water 20 minutes and sliced
- 1/4 lb. vegetables, celery, green onions, beans, cut into matchsticks
- 1/2 cup stock
- 1/2 teaspoon cornstarch
- 1 tablespoon soy sauce
- Pinch of five-spice powder
BROWN SUGAR POUND CAKE

Beat butter and shortening at medium speed with electric mixer until creamy
- Do not preheat the oven for this pound cake
- 1 cup butter softened
- 1/2 cup shortening
- 2 cups firmly packed brown sugar
- 1 cup granulated sugar
- 6 large eggs
- 3 cups cake flour
- 1 teaspoon baking powder
- 1 cup evaporated milk
- 2 teaspoons vanilla extract
- 2 cups chopped toasted pecans
MARINATED PEPPERS

Wash peppers and roast them whole in a 450 degree oven for 10-15 minutes until skins blister and blacken
- 2 red, green and yellow peppers
- 3 garlic cloves sliced
- 2 tablespoons balsamic vinegar
- 1/2 cup olive oil
- 8 slices toasted bread
- 1 teaspoon each chopped fresh basil and parsley
- Salt and pepper to taste
SHRIMP CARIBBEAN WITH HORSERADISH MARMALADE SAUCE

Mix the flour, salt, pepper and egg yolks in a bowl
- Horseradish Marmalade:
- 1-1/2 cups flour
- 1 teaspoon salt
- 1/4 teaspoon white pepper
- 2 egg yolks, beaten
- 3/4 cup flat beer
- 1 tablespoon dark rum
- 24 large shrimp
- 1 cup coconut sweetened
- 1 cup orange marmalade
- 1/4 cup prepared horseradish
APRICOT CHICKEN WITH ROASTED POTATO THINS

Place chicken between 2 sheets of plastic wrap
- Roasted Potato Thins:
- 4 skinned and boned chicken breast halve
- 1/4 teaspoon salt
- 1 (16 oz.) apricot halves undrained
- 1/2 cup orange juice
- 2 tablespoons soy sauce
- 1 garlic clove minced
- 1 teaspoon dark sesame oil
- 3/4 cup all-purpose flour
- 14 teaspoon ground red pepper
- 2 teaspoons vegetable oil
- 6 green onions thinly sliced
- Roasted potato thins
- 1 large unpeeled baking potato
- Vegetable cooking spray
- 1/4 teaspoon salt
RED SAUCE

Heat oil in skillet and saute onion until tender
- 2 tablespoons flour
- 2 tablespoons oil
- 4 tablespoons chili powder
- 3 dashes Tabasco sauce
- 1 each garlic clove
- 1 teaspoon salt
- 1/4 teaspoon cumin
- 1 onion chopped
- 2 cups water
SPAGHETTI HAM PIE

Cook spaghetti according to package directions, drain
- 6 ounces spaghetti, uncooked
- 2 tablespoons finely chopped green onion
- 4 cloves garlic, minced
- 2-1/2 tablespoons olive oil
- 1/4 cup all purpose flour
- 1/4 teaspoon salt
- 1/8 teaspoon ground pepper
- 1-1/2 cups milk
- 3/4 cup half and half
- 3/4 cup chopped cooked ham
- 1/4 cup grated Parmesan cheese, divided
MASHED POTATOES WITH GARLIC, MASCARPONE, AND CARAMELIZED LEEKS

Melt butter in large nonstick skillet over medium heat
- 3 tablespoons butter
- 4 medium leeks (white and pale green parts only halved lengthwise, rinsed, chopped about 5 cups
- 1/2 cup or more whole milk
- 12 garlic cloves coarsely chopped (about 1/2 cup)
- 3-3/4 lbs. russet potatoes, peeled, cut into 1” cubes
- 3/4 cup mascarpone cheese (about 6 ounces)
CHOCOLATE CHERRY FUDGE BARS
