- 8 oz cream cheese
- 2 tbsp milk
- 2 tsp vanilla
- 4 cups icing sugar
- butter to taste
SHRIMP AND BOK CHOY LETTUCE WRAPS

- PEANUT SAUCE:
- 3 tbsp peanut butter
- 1 tbsp lime juice
- 1 tbsp soy sauce
- 1 tbsp liquid honey
- 1 clove garlic minced
- pinch pepper
- 2 tbsp water
- SHRIMP FILLING
- 1 tbsp oil
- 225 extra jumbo shrimp (16-20 count)
- 1 tsp veg oil
- 2 cloves garlic minced
- 1 tsp fresh ginger
- 2 heads of Shanghai Bok Choy thinly sliced
- 1 carrot cut in matchsticks
- pinch of salt
- pinch of pepper
- 1 cup bean sprouts
- 1 green onion sliced
- 1/2 cup unsalted peanuts, chopped
COBB SALAD

- DRESSING:
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 tsp dry mustard
- 1 tsp worchestire sauce
- 1/2 cup red wine vinegar
- 1 tbsp water
- 2/3 cup olive oil
- SALAD INGREDIENTS:
- 1 head Romaine lettuce, finely chopped
- 1 head Iceberg lettuce, finely chopped
- 6 crispy strips bacon, crumbled
- 1/4 lb blue cheese, crumbled
- 3 hard cooked boiled eggs, chopped
- 2 tomatoes, chopped
- 2 avocados, chopped
- 1/4 lb chopped swiss cheese
- 1/4 cup chopped parsley
HOME MADE SALSA

Cook for ten minutes. Add some tomatoe paste to thicken, if required
- 4 cups seeded and chopped tomatoes
- 1 cup finely chopped red onion
- 2 cloves garlic
- 1/2 cup seeded and chopped green chili peppers
- 1 cup chopped red and green pepper
- 1 jalapeno pepper - seeded and minced
- 1/4 cup chopped cilantro
- 1/4 cup red wine vinegar
- 2 tbsp olive oil
MARGHERITA PENNE

Got this recipe from Milk Calender 2015 - very quick and very good
- 12 oz penne pasta cooked to instructions
- 2 tbsp. butter
- 2 cloves minced garlic
- 1 1/2 tsp dried thyme
- 1/2 tsp salt
- 1/4 tsp hot pepper flakes
- 2 tbsp. flour
- 2 1/2 cups milk
- 2 cups cherry tomatoes, cut in half
- 1/2 cup grated parmesan cheese
- 12 - 1" mini Canadian Bocconcini (I used mozzarella cubes)

- SHORTBREAD PASTRY:

- 1 cup graham crumbs
- 1 cup crushed walnuts

CHICKEN TETTRAZINI

An old recipe from mom - great way to use up turkey or chicken
- Bouillon :
- 4 litres d'eau
- 1 kg d'os de porc ou carcasse de poulet (ou les deux 500 gr de chaque)
- 2 calamars séchés (épicerie asiatique)
- 1 poignée de crevettes séchées
- 1 oignon
- Gingembre (taille du pouce)
- 1 branche de cèleri
- 4 cuillères à soupe de nuoc mam
- 4 cuillères à soupe de sucre de palme
- Poivre
- Garniture :
- 400 gr d'échine de porc hachée
- 2 gousses d'ail
- Ciboulette
- 12 crevettes
- Cha lua (épicerie asiatique)
- 400 gr de vermicelle type Hu tieu (épicerie asiatique)
- Ciboule asiatique (épicerie asiatique)
- Coriandre
- Soja (une petite poignée par personne)
- Citron vert
- Nuoc mam
