Got this from Canadian Living - February 2015 - another hit !!
- 1/4 cup flour
- 1/2 tsp salt
- 1/4 tsp pepper
- 1.5 kg boneless beef blade pot roast cut into 1" cubes
- 3 tbsp butter
- 1 tbsp vegetable oil
- 2 ribs of celery - diced
- 1 onion, diced
- 2 tbsp tomatoe paste
- 1/2 cup dry red wine
- 1 lb mini white potatoes, quartered
- 3 large carrots, cut into 1 1/2" chunks
- 10 sprigs fresh thyme
- 6 sprigs fresh parsley
- 2 bay leaves
- 3 cups beef broth
- 1/2 tsp worchestire sauce
- 3/4 cup pickeled onions, drained and rinsed
- 3/4 cup frozen peas

CHUCK WAGON PIE WITH CHEESE WHIZ TOPPING

- 1 1/2 lb potatoes, yellow
- 1/2 cup cheese whiz
- 1/4 cup sour cream

- FILLING:
- 1 1/2 tbsp. oil
- 8 oz ground chicken or beef
- 1/3 cup chopped onion
- 1 tbsp. minced garlic
- 1 can diced tomatoes
- 1 can red kidney beans
- 1 can corn kernels, drained

- CUSTARD:
- 1 cup sugar
- 1 tbsp flour
- 3 tbsp milk
- 2 egg yolks, slightly beaten
- 2 1/2 cups chopped rhubarb
- 2 tbsp butter
- PIE:
- 1 unbaked pie shell◘
- MERINGUE:
- 2 eggs whites
- 5 tbsp sugar
- 1/4 tsp salt
- 1/2 tsp vanilla
CREAMY CHICKEN VEGETABLE PASTA

In fry pan, heat oil and brown chicken on both sides
- 2 tbsp oil
- 1 lb boness chicken breasts
- 1 cup sliced zucchini
- 1 cup sliced mushrooms
- 1/2 cup chopped red pepper
- 1 tbsp OXO bouillon mix
- 1 cup hot water
- 1 cup cream
- 2 tbsp flour
- 1 tsp dijon mustard
- 1/2 tsp dried basil
- 1/4 tsp pepper
- 11 225 gr fresh pasta or 1/2 lb dry pasta

- 1 finely chopped onion
- 2 cloves garlic
- 1 lb ground beef
- 1/3 cup flour
- 1 cup beef broth
- 1 can evaporated milk
- 1 cup frozen peas
- 1 cup shredded cheddar
- 1/3 cup chopped fresh parsley
- 4 tsp Dijon mustard
- 1/4 tsp salt
- 1/4 tsp pepper
- 1 3/4 cups cooked elbow macaroni
BRAISED SHORT RIBS

- 8 whole beef short ribs
- salt and pepper to taste
- 1/4 cup flour
- 6 pieces pancetta or bacon, diced
- 2 tbsp. olive oil
- 1 whole medium onion, diced
- 3 whole carrots, diced
- 2 whole shallots, peeled and finely minced
- 2 cups red wine
- 2 cups beef broth (enough to cover the ribs)
- 2 sprigs thyme
- 2 sprigs rosemary

- 2 tsp corn starch
- 2 tbsp. sour cream

- 1 tsp balsamic vinegar
