GREEK LEMON POTATOES

Got this recipe from the Food Network
- 2 pounds of white potatoes and cut into 3/4 inch cubes
- 1/4 cup fresh lemon juice
- 1 tbsp chopped fresh oregano
- 3 tbsp chopped fresh parsley
- 1/4 cup olive oil
- salt and pepper
- paprika to taste

- 2 - 10 oz pkgs frozen broccoli spears

- 1 - dash sherry
- 1/4 cup grated cheddar
- 1/2 cup bread crumbs

ALMOND COCONUT ENERGY BITES

- 2 cups oats
- 3/4 cups shredded unsweetened coconut
- 1/4 cup slivered almonds
- 1/4 cup shaved chopped coconut
- 1/4 cup flax seed
- 2 tbsp almond milk

- 1/3 cup honey

- 1 tbsp minced parsley
- 3/4 tsp chili powder
- 3/4 tsp paprika
- 3 tbsp melted butter

- CHICKEN TOPPING:
- 2 medium tomatoes, coarsley chopped
- 1/2 cup chopped green pepper
- 1/4 cup chopped onion
- 2 tbsp minced parsley
- 1 garlic clove, minced
- 1 tbsp lemon juice

- 3 tbsp corn starch
- 1 tbsp vanilla
- 2 tsp grated lemon zest
- 3 large eggs at room temperature
- 1/2 cup sour cream
- TOPPING
- 1 1/2 cups sour cream
- 1/4 cup sugar
- 1 tsp vanilla
- BLUEBERRY COMPOTE
- 2 cups fresh or frozen blueberries

- 1 lb fresh rhubarb (approximately 4 cups chopped)
- 1/2 cup sugar
- 1 - 85 g package strawberry jello powder
- 1 white cake mix (could also use yellow)
- 1 cup water
- 1/3 cup melted butter
RASPBERRY SOUFFLES

Went to Schoolhaus for a class and this was a recipe that we tried
- 3/4 cup raspberry puree (about 2 cups fresh/frozen, pureed and strained)
- 1 cup sugar
- 5 egg whites at room temperature
- 1/2 tsp cream of tartar
- 1 tbsp lemon juice
- 1 tsp vanilla
- 2 tbsp Chambord (raspberry licquer)
