HEARTY MINESTRONE SOUP

Got this one from The Leader Post - April 6, 2016
- 2 tbsp olive oil
- 1 diced onion
- 1 leek - white part only - diced
- 2 carrots, peeled and diced
- 2 stalks celery, diced
- 4 cloves garlic - minced
- 1/2 tsp crushed red pepper flakes
- 1/4 cup white wine
- 2 tbsp tomatoe paste
- 1 - 28 oz can crushed tomatoes
- 3 sprigs oregano or 1/4 tsp dried
- 2 bay leaves
- 6 cups chicken broth
- 2 large potatoes, peeled
- 1 1/2 cups cooked cannellini beans (white kidney beans)
- 1 1/2 cups kidney beans
- 1 cup dry small shell pasta
- 1/3 cup peas
- 1 small zucchini diced
- salt and pepper
- Grated parmesan cheese

AVOCADO LIME SHRIMP SALAD

Got this from allrecipes.com - served it at ShrimpFest at our house - hugely popular
- 1 1/4 lbs peeled and deveined shrimp, cut into 3 pieces each
- 3 avocados, pitted and sliced
- 1 bunch green onions, chopped
- 3 large tomatoes, diced
- 1 large yellow tomatoe, diced
- 1 bell pepper (any color) chopped
- 1/2 bunch cilantro, chopped
- 2 tbsp fresh lime juice
- salt and pepper to taste
ROASTED PARSNIP AND PEAR SOUP WITH TOASTED HAZELNUTS

- 2 large parsnips, peeled and cut into pieces
- 1 Bartlett or Bosc pear, unpeeled and cut into wedges
- 4 cloves garlic
- 2 sprigs of fresh thyme
- olive oil to coat
- salt and pepper
- 1 medium onion, diced
- 1 stalk celery, diced
- 4 cups vegetable stock
- 1/2 cup hazelnuts, toasted and coarsely chopped
