Spicy Peanut Dip

In a food processor, blend together all the ingredients until smooth
- 1 1/2 cup soft or silken tofu
- 3-4 tbsp peanut butter
- 2 tbsp lime juice
- 1/4 tsp cayenne pepper
- 1/4 tsp pepper
- 1 tbsp Braggs
- 2 cloves garlic, roughly chopped
Perfect Shrimp Salad Finger Sandwiches

In a bowl mix shrimp with shallots, lemon juice and parsley, mayonnaise and seasonings
- 2 cups cooked small or medium shrimp, cooled and finely chopped
- 1 tablespoon shallots, finely minced
- 1/2 tablespoon fresh lemon juice
- Pinch of cayenne pepper or Old Bay seasoning
- 1/2 tablespoon parsley, finely chopped
- 1/4 cup or more mayonnaise
- Salt and pepper to taste
- 10 medium slices of bread, white, wheat, brown or combination
Vanilla Ice Cream with Balsamic Fig Sauce

- 2 pints vanilla bean ice cream
- 1/3 cup balsamic vinegar, eyeball it
- 1/2 cup water, eyeball it
- 10 dried Mission figs or 20 baby Mission figs, chopped
- 1 canister prepared real whipped cream from dairy aisle of market
- Freshly grated nutmeg, to garnish
