Raspberry-Almond Pizza

Directions Preheat a baking sheet in a 450 degrees F oven
- 1 pound pizza dough
- melted butter
- sugar
- 1/4 cup raspberry jam
- 1/3 cup marscapone or cream cheese
- confectioners' sugar
- 1/2 teaspoon vanilla
- raspberries
- toasted almonds
Unfried Refried Beans

This dish is low fat. Drain and rinse canned beans well
- 1 can 16 ounce organic beans (black, red kidney, pinto)
- 1/2-3/4 cup water or vegan broth
- 3-6 cloves garlic, chopped
- 1 medium onion, chopped
- 1/2 teaspoon cumin
- 1 chili pepper, seeded and chopped
- salt and pepper, to taste
- 1/2 lime, juiced (optional)
- fresh cilantro, chopped for garnish
Roast Beef and Horseradish Finger Sandwiches

Combine mayonnaise and horseradish
- 2 tablespoons mayonnaise
- 2 teaspoons prepared horseradish sauce
- 10 medium to large slices of bread, white, wheat or brown, or combination
- 1/3 pound thinly sliced roast beef
- 3 tablespoons butter, softened
Drunken Strawberries

- 1 1/2 pints strawberries , hulled and halved
- 1/4 cup artificial sweetener
- 2 tablespoons rum flavoring
- 1 teaspoon pure vanilla extract
- 1 teaspoon fresh lemon juice
- 3 cups fat-free ice cream (optional)
- 6 slices angel food cake (optional)
Mojito

- 1.25 oz Captain Morgan spiced run
- 12 mint leaves
- 1 tbsp sugar
- 0.5 oz lime juice
- 2 oz soda
Vegan White Cake

- 1 1/3 cup Spelt or Kamut Flour
- 2 tsp Baking Soda
- Pinch of Salt
- 2/3 cup unrefined sugar
- 2/3 cup Milk Alternative
- 1/4 cup palm or Coconut Oil, melted
- 1 tsp Vanilla
- 1 Golden Flax 'Egg' (1 Tbsp golden flax seed, ground + 3 Tbsp water. Whisk together and let stand for a couple of minutes)
Tuna Tartare in Cucumber Cups

Chargrilled Quinoa

- 180 g quinoa
- 500 ml vegetable stock
- 2 lemons
- 2 tbsp olive oil
- 4 tbsp fresh mint, chopped
- 4 tbsp fresh coriander, chopped
- 60 g chopped toasted almonds
- freshly ground black pepper
Veggie Crockpot Lasagna

Spray the crockpot with nonstick cooking spray
- (2) 24 ounce jars or cans of Italian tomato sauce (see notes)
- 9 thick lasagna noodles with wavy edges (mine were called bronze cut)
- 24 ounces part-skim ricotta cheese OR cottage cheese
- 3-4 cups chopped vegetables of choice (I used kale)
- 2 cups shredded Mozzarella or Provolone cheese
- Parmesan cheese for topping
- fresh parsley for topping
Brunch Bake

Preheat oven to 350F. Place a large skillet over medium-high heat and add onions and sausages
- 8 eggs
- 1 1/2 cups of milk
- 1/2 loaf whole grain bread, cubed and toasted
- 8 small breakfast sausages, sliced
- 1 large onion, sliced
- 1 cup grated cheddar cheese
- 3 sprigs fresh tarragon
- salt and pepper
