Cherry Dark Chocolate Chip Muffins

Preheat oven to 375 degrees F
- 1/3 heaping cup oat flour (ground from rolled oats)
- 1 cup whole wheat pastry flour or unbleached all purpose
- 1/2 tsp baking soda
- 1 tsp baking powder
- pinch salt
- 1/4 cup brown sugar (or sub honey*)
- 1/4 cup melted coconut oil (or sub canola/grapeseed)
- 3/4 cup almond milk
- 1 tsp almond extract
- 1 heaping cup fresh cherries, pitted and lightly chopped
- 1/4 cup chopped dark chocolate, divided

- For Peanut Dipping Sauce:
- 1 carrot, peeled and cut into long matchsticks
- 1 green pepper, cut into long matchsticks
- 1 red pepper, cut into long matchsticks
- 1 cucumber, cut into long matchsticks
- Romaine lettuce leaves
- 6 ounces Asian rice vermicelli noodles
- Round rice sheets
- Sprigs of cilantro and/or Thai basil, mint
- 1 small piece of lemon grass, chopped
- Freshly grated ginger-to taste
- 1 cup water
- 1/2 cup hoisin sauce
- 3 tablespoons smooth peanut butter
- 11/2 tablespoons sugar
Banana muffins

Preheat oven to 350 degrees F and line a muffin tin with 8 paper liners
- 2 flax eggs or sub 2 small eggs
- 2 medium ripe bananas
- 3 Tbsp agave nectar, maple syrup or honey if not vegan
- 3 Tbsp unsweetened vanilla or plain almond milk
- 1 tsp pure vanilla extract
- 1 tsp baking powder
- 1 cup almond meal (ground from raw almonds)
- 1/2 cup + 2 Tbsp oat flour (ground from GF oats)

- Soup:
- 4 medium potatoes, scrubbed, diced
- 3 small-medium leeks, light green and white parts, trimmed, washed, sliced
- 3 large carrots, scrubbed, trimmed, sliced into rounds
- 2 large garlic cloves, minced, reserving 1 teaspoon for bread crumbs
- 6 cups of water
- 1 teaspoon salt
- 2 teaspoons thyme, woody stem removed, leaves finely minced
- Bread Crumb Topping:
- Drizzle of olive oil
- 1 teaspoon thyme - woody stems removed
- 1 teaspoon reserved minced garlic
- 1 slice of your favorite bread, toasted, processed in food processor until crumbs form
