Spinach and Artichoke Dip

Best spinach and artichoke dip you will ever taste! Great for a crowd
- 2 (10 ounce) packages fresh spinach, well rinsed and stems trimmed
- 4 tbsp. unsalted butter
- 1 cup chopped yellow onions
- 1 tbsp. minced garlic
- 1 tsp. salt
- 1/2 tsp. ground black pepper
- 1/4 tsp. cayenne
- 1/4 cup all-purpose flour
- 1 cup milk
- 1 cup heavy cream
- 2 tsp. fresh lemon juice
- 1 cup 1/2 inch cubes rindless Brie
- 1 cup grated Monterey Jack
- 1 (6 1/2 ounce) jar marinated artichoke hearts, drained and chopped
- 4 strips bacon, fried crisp, chopped
- 1/4 cup grated Parmesan
- Assorted chips for dipping (pita, tortilla, bagel)
Baked Cheese Spread

1. Preheat oven to 350 degrees
- 1 cup mayonnaise
- 1 cup grated Colby cheese
- 1 cup chopped onion
- Dash of Tabasco sauce
- Dash of Worcestershire sauce
Pain Perdu

This is a lighter version of the the French Toast at Cafe Adelaide
- 3/4 cup 2% milk
- 2 tbsp. sugar divided
- 1/2 tsp. ground cinnamon
- 1 1/2 tsp. vanilla extract
- 1/4 tsp. grated whole nutmeg
- 1/8 tsp. salt
- 3 large eggs, lightly beaten
- 8 slices diagonally cut day-old French bread (about 1 inch thick)
- 2 cups sliced strawberries
- 2 tsp. grated orange rind
- 4 tsp. butter, divided
- 2 tbsp. powdered sugar
Barefoot Contessa's Roast Turkey

1. Wash turkey, remove neck and giblets, and pat dry
- 12 lb. turkey
- 1 onion
- few sprigs thyme
- 1 lemon
- head of garlic

- 1 beef roast (size depends on how many you want to serve), preferably top sirloin
- 1 can beef consomme
- Salt and pepper
Galaktobouriko (Greek Milk Pie)

Traditional Greek custard dessert
- 6 cups 2% milk
- 1 cup fine semolina
- 3 1/2 tbsp. cornstarch
- 3 cups granulated sugar
- 1/4 tsp. salt
- 6 eggs
- 1 tsp. vanilla extract
- 1 tbsp. butter
- 12 sheets of phyllo pastry dough
- 3/4 cup butter, melted and hot
- 1 cup water
- 1 lemon (1/2 zested for custard and 1/2 peeled for syrup)
- 2 tbsp. fine brandy or cognac
- 1 cinnamon stick
- 2 whole cloves
Strawberry Balsamic Jam

1. In a large pot, mash strawberries with a potato masher
- 8 cups strawberries, washed and hulled (about 1 1/5 pounds)
- 5 cups sugar
- 1/2 tsp. butter
- 3 tbsp. balsamic vinegar
- 7 half-pint canning jars, lids, and bands
Pumpkin Bread

This delicious and moist pumpkin bread can be made in two varieties: Chocolate or Rum-Raisin!
- Pumpkin Bread:
- 2 1/2 cups pumpkin puree
- 4 large eggs
- 1/2 cup vegetable oil
- 2/3 cup water
- 3 1/2 cups all-purpose flour
- 3 cups sugar
- 2 tsp. baking soda
- 1/2 tsp. salt
- 1/2 tsp. ground cinnamon
- 1/4 tsp. ground nutmeg
- 1/4 tsp. ground cloves
- For Chocolate Pumpkin Bread :
- 8 ounces chopped semi-sweet chocolate
- For Rum-Raisin Pumpkin Bread :
- 1 cup raisins
- 1/4 cup rum
Double Chocolate Caramel Bread Pudding

- 6 thick slices egg bread
- 6 oz. white chocolate, chopped
- 3 cups hot milk
- 5 eggs
- 3/4 cup brown sugar
- 2 tsp. vanilla

- 1/2 cup olive oil

- 2 finely chopped onions
- 3-4 cloves of garlic, minced
- 3-4 crushed tomatoes
- 1/2 a fennel bulb
- 1-2 bay leaves
- 1/4 tsp. thyme
- A variety of firm and delicate fleshed fish, and shellfish(such as conger eels, scorpion fish, grey mullet, razorfish, moray eels, crab, whiting, hake, cod, monkfish)
- 3 litres water
- slices of potatoes (optional)
- Croutons:
- French loaf of bread cut into slices
- Rouille:
- 3 cloves garlic
- 1 red chili
- breadcrumbs made from a few pieces of bread soaked in water and then squeezed dry
