Delicious "President's Choice" version of the classic Bruschetta
- 2 tbsp. extra virgin olive oil
- 1 onion, thinly sliced
- 1 clove garlic, minced
- 3 large ripe tomatoes, coarsely chopped
- 1/4 cup chopped fresh basil
- 1/2 cup crumbled goat cheese
- salt and freshly ground pepper
- 1 PC Rustico Crusty Italian Style White Bread
- 1/4 cup PC Roasted Garlic-Flavoured Olive Oil
Philly 3-Step Cheesecake

1. Mix cream cheese, sugar and vanilla with electric mixer at medium speed until well blended
- 2 packages (250 g. each) regular or light Philadelphia Cream Cheese, softened
- 1/2 cup sugar
- 1/2 tsp. vanilla
- 2 eggs
- 1 graham cracker ready crust (9 inch)
Vanilla Honey-Nut Smoothie

You can find flaxseed in health-food stores already ground
- 2 cups vanilla low-fat frozen yogurt
- 1/2 cup vanilla soy milk
- 1/2 cup fat-free milk
- 1/3 cup cubed soft silken tofu
- 1 tbsp. creamy peanut butter
- 1 tbsp. honey
- flaxseed (optional)
Lemon Risotto

This risotto is creamy and delicious
- 2 cups vegetable stock
- Zest and juice of one lemon
- 1 tbsp. olive oil
- 1 shallot, finely diced
- 1 cup Arborio rice
- 1/2 cup white wine
- 2 egg yolks
- 2 tbsp. mascarpone cheese
- 3 scallions
- 3 tbsp. fresh herbs(thyme, parsley)
- Salt and pepper to taste

Believe it or not, this recipe is low in fat and tastes great
- 3 1/4 tsp. salt, divided
- 3/4 lb. strozzapreti or penne pasta
- 4 tsp. all-purpose flour
- 1 1/2 cups skim milk, divided
- 2 cups finely shredded sharp cheddar cheese, divided
- 1/4 cup sliced green onions
- 1 tsp. hot sauce
- 1/4 tsp. pepper
- 2 slices center-cut bacon, cooked and crumbled
- Cooking spray
Chocolate Malted Milkshake

- 2 cups milk
- 1/4 cup malted milk powder
- 3 cups good quality chocolate ice cream
- 1/4 cup chocolate sauce
- Pinch of fine salt
- Whipping cream, slightly sweetened, for garnish
- Chocolate shavings, for garnish
Baked Greek Pasta with Braised Beef or Chicken

This recipe requires some traditional Greek ingredients which may be difficult to find
- 2 lb. stewing beef or chicken (thighs, drumsticks)
- 1/3 bottle Italian tomato sauce
- 1 tsp. cinnamon
- 1/2 tsp. ground cloves
- 1/2 tsp. ground allspice
- Salt and pepper
- 1/2 cup olive oil
- water
- 2 cups Greek Chilopittes pasta (small squares of pasta)
- 1 cup grated Greek Mitzithra cheese (hard, dry salty cheese)
Blueberry Blast Smoothie

1. Put all ingredients into a blender and process until smooth
- 1/2 cup nonfat or 1% low-fat milk
- 1/2 cup nonfat plain yogurt
- 1 cup frozen blueberries (unsweetened)
- 1 tsp. honey, or more to taste
Triple Chocolate Brownies with a Cinnamon Cream Cheese Icing

These brownies are not your usual brownies
- For brownies:
- 1 tsp. plus 1 cup vegetable shortening
- 2 cups sugar
- 4 large eggs
- 1/2 cup water
- 1 tsp. vanilla extract
- 1 cup all-purpose flour
- 3/4 cup unsweetened cocoa powder
- 1 tsp. baking powder
- 1/2 tsp. salt
- 1 cup chopped toasted pecans
- 2 ounces semi-sweet chocolate
- 2 ounces milk chocolate
- 2 ounces white chocolate
- For icing:
- 1 lb. confectioner's sugar
- 1 tsp. ground cinnamon
- 1/2 lb. cream cheese, at room temperature
- 2 tbsp. milk
Portobello Parmesan

Preheat the oven to 350 degrees F
- 1 tablespoon extra-virgin olive oil, plus more for the dish
- 3 portobello mushroom caps
- 1/4 teaspoon red pepper flakes
- 3 cloves garlic, smashed
- 1 28 -ounce can diced tomatoes
- 4 fresh basil leaves
- Kosher salt and freshly ground pepper
