Lemon & Garlic New Potatoes

Scrub potatoes; place in a large saucepan and cover with water
- 1 pound small red potatoes
- 2 tablespoons olive oil
- 2 garlic cloves, minced
- 1/4 cup shredded Parmesan cheese
- 2 tablespoons lemon juice
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
Potato Sausage Foil Packs

Divide the kielbasa, potatoes, peppers and onion among four double thicknesses of heavy duty foil
- 1 pkg. Kielbasa, sliced
- 2 large potatoes, cut into wedges
- 1 each: medium green, sweet red and yellow peppers, cut into 1 in pieces
- 1 medium onion, chopped
- 4 tsp lemon juice
- 4 tsp olive oil
- 1/2 tsp garlic powder
- 1/2 tsp pepper
- 1/4 tsp salt
Energy Balls

Mix ingredients together. Form into balls
- 1 cup dry oatmeal
- 1/2 cup chocolate chips
- 1/2 cup peanut butter
- 1/2 cup ground flaxseed
- 1/3 cup honey
- vanilla
Buttery Onion Corn on the Cob

In a small bowl, combine butter and soup mix; rub over corn
- 1/2 cup butter, melted
- 1 envelope onion soup mix
- 4 medium ears sweet corn, husks removed
Blueberry & Chocolate coconut rice cakes

Combine rice, water and a dash of salt in a rice cooker and let cook
- 3 cups uncooked sticky rice
- 4 1/2 cups water
- 3/4 cup coconut milk
- 1/4 to 1/2 cup raw sugar to taste
- juice of 1 lemon (about 3 tablespoons)
- 1 1/2 teaspoons coarse salt, or to taste
- 6 ounces chocolate chips (half of a regular bag)
- 1 pint fresh blueberries
Apple Muffins

1. Heat oven to 400 degrees
- 1 cup all-purpose flour
- 1 cup whole-wheat flour
- 1 teaspoon baking soda
- 1/2 teaspoon cinnamon
- /2 teaspoon salt
- Pinch nutmeg
- 1 cup packed light-brown sugar
- 2 Granny Smith apples, peeled, cored and cut into 1/4-inch pieces (about 3 cups)
- 1/4 cup (1/2 stick) unsalted butter, softened
- 2 eggs
- 1 cup natural applesauce
- 1 teaspoon vanilla extract
- 3/4 cup buttermilk
Peaches and Cream French Toast

1. In a small saucepan, combine the brown sugar, butter and corn syrup
- 1 cup packed brown sugar
- 1/2 cup butter, cubed
- 2 Tbsp. corn syrup
- 1 can (29 oz) sliced peaches, drained
- 1 loaf (1 lb) day ol French bread, cubed
- 1 pkg (8 oz) cream cheese, cubed
- 12 eggs
- 1 1/2 cups half and half cream
- 1 tsp. vanilla extract
Hot Quick Banana Boats

Place each banana lengthwise about 1/2 in deep, leaving 1/2 in uncut at both ends
- 4 large unpeeled bananas
- 8 tsp. semisweet chocolate chips
- 8 tsp trailmix
- 1/4 cup miniature marshmallows
Rosemary Roasted Potatoes & Asparagus

In a small bowl, combine the potatoes, 2 tablespoons oil, rosemary and garlic; toss to coat
- 1/2 pound fingerling potatoes, cut into 1-inch pieces
- 1/4 cup olive oil, divided
- 2 tablespoons minced fresh rosemary or 2 teaspoons dried rosemary, crushed
- 2 garlic cloves, minced
- 1 pound fresh asparagus, trimmed
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground pepper
