Red, White & Blue Berry Trifle

- 1 can (14 ounces) sweetened condensed milk
- 1-1/2 cups 2% milk
- 2 packages (3.4 ounces each) instant lemon pudding mix
- 1/2 cup sour cream
- 2 cups fresh blueberries
- 2 cups fresh raspberries
- 1 tablespoon lemon juice
- 1 package (16 ounces) frozen pound cake, thawed and cubed
- 1 container (8 ounces) frozen whipped topping, thawed
- Additional blueberries and raspberries, optional
Potato Soup

Fry bacon until crisp. Saute' onion and pour off grease
- 8 slices bacon
- 2 c. cubed potatoes
- 1 can cream of celery soup
- 1 3/4 c. milk
- 2 T. parsley
- 1 c. onion
- 1 c. water
- 1 c. sour cream
- 1/2 tsp. salt
- dash pepper
Roasted Garlic-Parmesan Mashed Potatoes

Cut off pointed edns of garlic bulbs: Place garlic on a piece of aluminum foil, and drizzle with oil, if desired
- 2 garlic bulbs
- olice oil
- 3 pounds potatoes, peeled and quartered
- 2 tsp. salt, divided
- 1/4 cup whipping cream
- 1/4 cup shredded Parmesan cheese
- 3 Tbsp. butter or margarine, softened
- 1/3 cup chopped fresh parsley
- 1/2 tsp. pepper
- Garnish; fresh thyme sprigs
Cream Cheese Cutouts

In a large bowl, cream butter, cream cheese, sugar and salt until light and fluffy
- FROSTING:
- 1 cup butter, softened
- 1 package (3 ounces) cream cheese, softened
- 1 cup sugar
- 1/4 teaspoon salt
- 1 egg
- 1 teaspoon vanilla extract
- 2-1/2 cups all-purpose flour
- 3 cups confectioners' sugar
- 1/3 cup butter, softened
- 1-1/2 teaspoons vanilla extract
- 2 to 3 tablespoons 2% milk
- Food coloring, optional
- Assorted sprinkles or candies

- 1/2 c sugar
- 1/3 c vinegar
- 1/2 tsp salt

Meatballs

1. Preheat oven to 350 degrees
- 1 1/2 lbs ground chuck
- 1/4 cup Parmesan cheese
- 1/2 cup bread crumbs
- 2 eggs
- 6 cloves garlic, blanched, peeled and chopped
- 1 tsp salt
- 1 tsp pepper
- 32 oz. marinara sauce
- 8 oz. water
White Chicken Chili

In a large saucepan over medium heat, cook onion in oil for 10 minutes or until tender
- 1 medium onion, chopped
- 1 Tbl extra virgin olive oil
- 2 cloves garlic, minced
- 4 boneless skinless chicken breast halves (4 oz each), chopped
- 2 cans (14 oz each) chicken broth
- 1 can (4 oz) chopped green chilies
- 2 tsp ground cumin
- 2 tsp dried oregano
- 1 1/2 tsp cayenne pepper
- 3 cans (14 1/2 oz each) great northern beans, drained, divided
- 1 cup (4 oz) shredded Monterey Jack cheese
- chopped jalapeno pepper, optional
Energy Balls

Mix all together and form into balls
- 1 cup rolled oats
- 1/2 cup chocolate chips
- 1/2 cup ground flax seed
- 1/2 cup peanut butter
- 1/3 cup honey
- 1 tsp vanilla extract
- (good with sunflower seeds too)
Peanut Butter Easter Eggs

In a large bowl, beat peanut butter, butter and vanilla until creamy
- 3/4 cup creamy peanut butter
- 1/2 cup butter, softened
- 1/2 tsp. Vanilla extract
- 2 1/3 cups confectioner's sugar
- 1 cup graham cracker crumbs
- 1 1/2 cups dark chocolate chips
- 2 Tbsp. Shortening
- Confectioners' sugar icing, optional

- 1 teaspoon garlic powder
