Banada Bread

Combine flour, baking powder and salt
- 1 3/4 c flour
- 2 tsp baking powder
- 1/4 tsp baking soda
- 1/2 tsp salt
- 2 eggs
- 1 2/3 c mashed banana
- 1/3 c shortening
- 2/3 c sugar
- 1 tsp vanilla
Corn and Wild Rice Saute

In skillet over medium heat, melt butter and oil
- 3 c thawed frozen corn
- 2 T. butter
- 2 T olive oil
- 1 T garlic minced
- 2 c cooked wild rice
- 3 T minced sun dried tomatoes
- 1/2 c fresh basil

Pork - Sweet & Sour

Brown garlic in oil and remove
- 1 lb boneless pork cubed
- 2 Tbsp. oil
- 2 cloves garlic minced
- 1 small onion diced
- 1 green pepper chopped
- 1 can pineapple
- Sauce
- Juice from pineapple
- 2 Tbsp. cornstarch
- 1 Tbsp. soy sauce
- 1/2 c brown sugar
- 1/2 c vinegar
- 1/2 c water
Greek Quinoa and Avocado

Makes 4 servings
- 1/2 cup uncooked quinoa
- 1 cup water
- 2 Roma (plum) tomatoes, seeded and finely chopped
- 1/2 cup shredded fresh spinach
- 1/3 cup finely chopped red onion
- 2 tbsp lemon juice
- 2 tbsp olive oil
- 1/2 tsp salt
- spinach leaves
- 2 avocadoes - pitted, peeled and sliced
- 1/3 cup crumbled feta cheese
Oatmeal Raisin/Choc Chip Cookies

- 1 c butter
- 1 1/2 c brown sugar
- 2 eggs beaten
- 1 tsp vanilla
- 1 1/2 c flour
- 1 tsp bkg soda
- 1/2 t salt
- 1/2 t cinnamon
- 2 1/2 c oatmeal
- 1 c chocolate chips
Caesar Salad

low- fat caesar sald dressing
- 1 to 2 finely chopped or minced garlic cloves
- 2 inches anchovy paste
- pinch of salt
- juice of one lemon
- 3 drops Worchestshire sauce
- 1/2 cup low- fat or light mayonnaise
- 2 to 3 T water
- 4 T (1/4 cup) freshly grated parmesan cheese
- Romaine lettuce
- coarsely ground black pepper
Chicken teriaki

Combine all ingredients in closed container
- 1/2 c soy sauce
- 1/2 c cooking sherry
- 1/4 c vinegar
- 1/3 c brown sugar
- 2 T canola oil
- 2 cloves garlic
- 1/2 tsp ginger

Combine and baste onto wings
- 1/4 cup hot sauce
- 1 T oil
- 1 t butter
- 1 t vinegar
- 1/4 t garlic powder
Ham Sauce (Francine's)

- 3 T brown sugar
- 3 t flour
- 2 T corn syrup
- 3 T dry mustard (2)
- 1/3 cup vinegar
- 1/3 cup pineapple juice
- 1 cup rings
- add 7 UP
