Fennel-Crusted Pork Loin

Heat oven to 400F. Using the bottom of a heavy pan, crush the fennel seeds
- 1 Tablespoon fennel seeds
- 2 cloves garlic, minced
- 4 Tablespoons olive oil
- kosher salt and pepper
- 2 pounds boneless pork loin
- 2 red onions, quartered
- 1 pound small white potatoes, quartered
- 3 firm pears (such as Bartlett), cored and quartered
Chocolate Black-Bottom Pie

1. In a medium microwave-safe bowl, microwave 1 1/4 cups cream until hot, about 3 minutes
- 3 1/4 cups heavy cream
- 8 ounces semisweet chocolate, chopped
- 1 Tablespoon spiced rum
- 1 easy press-in pic crust made with chocolate wafers
- 1/2 cup toasted macadamia nuts, coarsely chopped
- 2 Tablespoons confectioners sugar
Cheddar Mashed Cauliflower

Cook cauliflower in 1 in. boiling water until tender
- 2 medium heads cauliflower, broken into florets
- 1/3 cup 2% milk
- 1 Tbsp. minced fresh rosemary
- 1/2 tsp. salt
- 1 cup shredded sharp cheddar cheese
Apple-Honey Drumsticks

1. Preheat the oven to 450F
- 12 skin-on chicken drumsticks
- kosher salt and freshly ground pepper
- 2 cups apple juice
- 1/2 cup apple cider vinegar
- 1/4 cup low-sodium soy sauce
- 2 teaspoons honey
- grated zest of 1 lemon
- 1/8 to 1/4 teaspoon red pepper flakes
- 2 teaspoons sesame seeds (optional)
- 1 Tablespoon unsalted butter
Chorizo-Potato Tacos

*Put the potatoes in a microwave-safe bowl, add 1/2 cup water and season with salt
- 2 medium red-skinned potatoes, cut into 1 inch chunks
- Kosher salt
- 1 medium yellow squash, diced
- freshly ground pepper
- 8 ounces fresh chorizo or other spicy sausage, casings removed
- 2 medium tomatoes, diced
- 1 scallion, minced
- 1 jalapeno pepper, minced (remove seeds for less heat)
- 1/3 cup fresh cilantro, chopped
- 8 corn tortillas
- 1/4 cup crumbled cotija or feta cheese
- Sour cream and/or guacamole, for serving (optional)
Beanless Crockpot Chili

1. Cook beef in large skillet over medium heat, stirring to crumble until beef is browned
- 3 1/2 pounds coarsely ground beef
- 1 can beef broth
- 3 teaspoons finely chopped onions
- 1 teaspoon garlic powder
- 3 teaspoons beef bouillon granules, divided
- 24 ounces tomato sauce
- 2 teaspoons paprika
- 1 teaspoon cayenne pepper
- 1/2 teaspoon black pepper
- 4 teaspoons chili powder
- 1 teaspoon cumin
- 1/4 teaspoon onion powder
- 1/4 teaspoon slat
- 1/4 teaspoon sugar
- 1/4 teaspoon garlic salt
- 1/4 teaspoon instant chicken bouillon granules
- 1/2 teaspoon lime juice

- 2 finely chopped apples
- 1/2 c pomegranate seeds
- 1/2 c chopped grapes
- 2 tbs chopped fresh mint
- 2 tbs lemon juice
