This is delicious! I used 1/2 of the sugar and 1 T plus 1 tsp of cornstarch for the recipe
- 2 cups rhubarb
- 3/4 cup sugar
- 3 T butter
- 1/2 cup milk
- 1 cup flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1 cup sugar
- 1 T cornstarch
- 1 cup boiling water
Rhubarb Coffee Cake

Cream butter and 1 ¾ c sugar until light
- Topping:
- 8 T butter
- 2 c sugar
- 1 c buttermilk
- 1 egg
- 1 t baking soda
- 2 ½ c flour
- 3 c finely cut rhubarb
- ½ c pecans
- 8 T butter
- ¾ c evaporated milk
- 1 c sugar
- 1 t vanilla
- Mix together and bring to boil; boil 3 ½ mins. Beat with spoon. Pour on top of cake.
