Champagne Mojitos

In a small saucepan, combine the sugar and water and cook over high heat just until the sugar has dissolved
- 3/4 cup sugar
- 3/4 cup water
- 1 1/2 cups packed mint leaves, plus 12 mint sprigs, for garnish
- 6 limes, cut into wedges
- 2 cups light rum
- Cracked ice
- 3 cups Champagne or sparkling wine
Quiche - Tofu

Cook your veggie of choice until just soft
- 1 sheet of ready made pie crust (pre cook for 12 minutes - checking)
- 1 medium onion, finely chopped
- 2 cloves minced garlic
- 1 lb / 450 g (your choice) broccoli or spinach, cooked to just done
- 1 lb / 450 g firm tofu, drained
- 1/2 cup soy milk
- 2 T soy parmesan cheese
- 1/4 t dijon mustard
- 3/4 t salt
- 1/4 t ground nutmeg
- 1/2 t ground red pepper
Spicy Orange Shrimp

Directions: 1. Heat the oil in a pan
- 1 tablespoon oil
- 1 pound shrimp (peeled and deveined)
- 1 tablespoon garlic (grated)
- 1 tablespoon ginger (grated)
- 1 orange (juice and zest)
- 1 tablespoon soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon honey
- 1 tablespoon chili sauce (or to taste)
- 1 handful cilantro (chopped)
Deconstructed Green Bean Casserole

Preheat the oven to 425°F
- Note: Instructions are provided for either roasting or steaming the green beans.
- 1 1/2 pounds fresh green beans, trimmed
- 3 medium shallots, cut into thin rings
- 1 tablespoon olive oil
- 6 ounces mushrooms (cremini or shiitake are good), sliced
- 1/2 cup minced onion
- 2 garlic cloves, minced
- 1/2 teaspoon dried thyme
- 1/4 teaspoon dried marjoram
- 3 tablespoons all-purpose flour (or gluten-free flour)
- 1 cup mushroom broth (use a porcini or other mushroom bouillon cube)
- 1 cup plain unsweetened nondairy milk
- Salt and freshly ground black pepper
Champagne Cocktail

This simple cocktail uses champagne, a sugar cube, and a few dashes of Angostura Bitters
- Sugar cube
- Angostura bitters (Peychaud’s bitters also works very well)
- Dry Champagne or other sparkling wine
- Lemon twist, for garnish
