Impromptu Mushroom Gravy

My mushroom gravy is always an ad lib affair; I don’t think I ever make it the same way twice
- 1/2 onion, minced
- 10 mushrooms, sliced
- 2 cloves garlic, minced
- 2 cups vegetable broth
- 1/2 teaspoon thyme
- 1/4 teaspoon rubbed sage
- 1 tablespoon nutritional yeast
- 1 teaspoon sherry (optional)
- 1 tablespoon soy sauce
- 2 tablespoons unbleached flour (substitute with arrowroot for gluten-free)
- 1/4 cup plain soymilk
- salt and freshly ground black pepper, to taste
Cucumber, Mango, and Spinach Salad

- 1 bunch or bag fresh spinach
- 1 mango, peeled and cut into bite-size pieces
- 1 large English cucumber, peeled and sliced
- 6 green onions, thinly sliced
- 1/2 cup chopped fresh basil
- 1 juice of 1 lime
- 1/2 cup seasoned rice vinegar
- 1 freshly ground black pepper, to taste
Chocolate Torte With Whipped Cashew Cream

Blend all ingredients in a high-speed blender until smooth and pour on top of the base
- For the base
- 1/2 cup cashews
- 1/2 cup pecans
- 1 tablespoon coconut oil
- 1 tablespoon melted cacao butter
- 1 teaspoon agave
- 1 teaspoon lemon juice
- Pulse all ingredients in a food processor until they bind.
- Press into a 9″ springform cake pan and place in the fridge to set.
- For the filling
- 1 cup Irish Moss paste*
- 1 cup cashews
- 1 1/2 cups cacao powder
- 3 cups grated or chopped cacao butter which has then been melted
- 1 cup agave nectar
- 1/2 cup water
- 1 tablespoon lemon juice
- 1/2 teaspoon tamari
- 1 teaspoon vanilla extract
- For the cream topping
- 1 cup cashews, soaked for 2 hours or more
- 1/2 cup water
- 3 tablespoons Irish Moss paste
- 1/2 teaspoon vanilla extract
- 1/4 cup agave nectar
- 1 teaspoon lemon juice
- Pinch salt
- 1 tablespoon macadamia oil (optional)
- Blend all ingredients in a high-speed blender until smooth.
- Serve with chocolate torte and fresh berries.
Corn-Jalepeno Cakes

- 1 cup yellow cornmeal
- pinch salt
- 1 1/2 cups boiling water
- 2 eggs
- 1 cup milk
- 1/2 cup flour
- 2 Tbsp melted butter
- 1/2 cup corn kernels
- 1 large or 2 small jalapeno chiles, seeded & finely diced
- Lime Crème Fraiche, recipe follows
- Smoked salmon either lox style or hard smoked
- Chives for garnish

- One 3 1/2 to 4 1/2 lb. spaghetti squash
- 1 T olive oil
- 1/2 medium yellow onion, chopped small
- 1 medium zucchini
- 1 1/2 oz. block of parmesan cheese
- 1/2 lb. fontina or mozzarella cheese
- 3 C very chunky marinara sauce (I use my mushroom marinara recipe)
- 1 C ricotta cheese (half of a 15 oz. pkg.)
- 2 large eggs
- 1 t Kosher salt
- 1/2 t ground black pepp
Slow Cooker Lemony Blueberry Oatmeal

- This recipe uses a smaller slow cooker that’s 1 1/2 to 2 quarts
- 1/2 cup steel-cut oats
- 2 cups Unsweetened So Delicious Coconut Milk
- 1 cup blueberries
- (I used fresh, but frozen should work fine too)
- 1 teaspoon vanilla extract
- 1/4 teaspoon lemon extract (or 1/2 teaspoon lemon zest)
