Tagine: Moroccan Vegetarian Tagine

My son's girlfriend Becca gave me a tagine for Christmas which pleased me no end
- INGREDIENTS
- 1 head garlic, chopped
- 2 onions, chopped
- 2 large carrots, peeled and cut into 1/2 inch thick pieces, or about 1 1/2 cups cut baby carrots
- 1 celery rib with leaves, chopped
- 1 tablespoon olive oil
- 1 lemon, juiced
- 1 teaspoon cinnamon
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon turmeric
- 1/4 cup chopped parsley
- 1/2 cup chopped cilantro
- 1 14 ounce can diced tomatoes
- 3 cups vegetable stock
- 1 14 ounce can chickpeas, drained and rinsed well
- 1 red pepper, chopped
- 1 pound butternut squash, cut into roughly 1 inch cubes
- 1 medium eggplant, chopped into roughly 1 inch cubes
- 1 cup sultanas
- 1/2 teaspoon crushed red pepper flakes
- 1 box prepared couscous
- (golden raisins)
Pumpkin Pie Spice

Mix all the spices together! Store in an airtight container -
- 1/2tsp.1/2 tsp. ground nutmeg
- 1tsp.1 tsp. ground cloves
- 2tsp.2 tsp. ground ginger
- 4tsp.4 tsp. ground cinnamon -

- 2 cloves garlic, smashed and finely chopped
- kosher salt
- 1 large butternut squash, peeled, seeded and cut into 1-inch cubes
- 1 large russet potato, peeled and cut into 1-inch cubes 2 cups white wine 2 quarts chicken or vegetable stock 1 bundle thyme
- 2 bay leaves 1 orange, cut in 1/2
- for the cinnamon whipped cream and fried shallots
- peanut or other neutrally flavored oil, for frying 2 large shallots 1 cup all-purpose flour kosher salt
- 1 cup heavy cream 1/2 teaspoon ground cinnamon
Insalata Di Farro (Farro Salad)

Combine shallots, olive oil, vinegar, mustard, capers and herbs in a bowl
- 2 medium shallots, minced or 1/4 clove garlic and 1/4 medium red onion, minced
- 2 tablespoons good olive oil
- 2 teaspoons red wine vinegar or 1 teaspoon balsamic vinegar
- 1/2 teaspoon Dijon mustard or 1/2 teaspoon minced anchovy or both
- 1 tablespoon minced capers or finely chopped, pitted black olives
- 1 cup (total) chopped fresh parsley, chives, thyme or basil (or any combination)
- 1 bay leaf
- 2 quarts chicken stock
- 2 cups farro
- 1 bell pepper, finely chopped
- 1 medium tomato, chopped
- 1/2 cup grated ricotta salata or other firm or semi-firm cheese
- 1/2 cup mozzarella cut into 1/4-inch dice
- Salt and pepper, to taste
- Squeeze of lemon juice
Vinaigrette: Meyer Lemon Vinaigrette

Transfer all the ingredients to an airtight container and mix well till incorporated
- 4 large Meyer lemons, juiced
- 2 to 3 Clementines, juiced
- 1/2 cup extra virgin olive oil
- 1/2 teaspoon salt
- 2 teaspoons agave

Apple Fries with Vanilla Whipped Cream {Vegan}

Begin by heating enough oil to coat the bottom of whatever pan you are using
- FOR PAN-FRYING:
- Oil Suitable for Frying (enough to cover the bottom of whatever sized pan you use)
- FOR THE APPLES:
- 2 large Apples (we used Granny Smith, but any firm variety will do), peeled, cored and sliced into wedges
- 1/4 C Cornstarch
- FOR THE CINNAMON SUGAR TOPPING:
- 1/4 C Sugar (NOTE: To clarify, we only use vegan-friendly sugar, such as Florida Crystals brand)
- 1 Tbl Cinnamon
- FOR THE DIP:
- 1/2 C So Delicious Dairy Free Coconut Milk Whipped Topping OR
- you can make whipped topping from a can of Coconut Milk
- 1 tsp Vanilla Extract
- Top with leftover Cinnamon Sugar
