Whipped Cream: Vegan Pumpkin Whipped Cream

Method Chill coconut milk in your refrigerator overnight undisturbed
- 2 cans (28 ounces) Full Fat Coconut Milk
- 8 ounces unsweetened, plain Pumpkin Purée
- 1/4 teaspoon Pumpkin Pie Spice
- 2-3 droppers full of Vanilla Stevia Drops or your favorite natural sweetener to taste
- pinch of fine Sea Salt
Seafood Sausage and Spinach Pasta

In a wide frying pan, heat the olive oil and add the garlic
- 4 seafood sausages, cut into 1 inch rounds
- 3 garlic cloves, sliced thin
- 2 tablespoons olive oil
- 1 cup frozen chopped spinach or 4 cups fresh spinach
- 1 cup mushrooms
- 2 teaspoons of Italian spices
- lemon pepper and lemon juice
- Salt
- 1/2 cup Parmigiano Reggiano, freshly grated
- 1/2 pound pasta- I used spinach and chives linguine, cooked al dente with 1/2 cup pasta water set aside

- 1/2 cup granulated sugar
- 1 cup sweet Riesling
- 2 pounds fresh cranberries, cleaned and picked through (any wrinkled or discolored cranberries discarded)
- 1 medium whole orange, quartered and deseeded
- 1/2 cinnamon stick
- 2 whole allspice berries
- 1 dried bay leaf
- 1/4 teaspoon fine sea salt

- 30 chinese chives

- 1 tbsp soy sauce
- 2 tsp. shaoxing jiu ( chinese rice wine)
- 2 tsp of fresh ground pepper
