In a large, heavy pot, fry the bacon over moderate heat till crisp and drain on paper towels
- 2 thick slices double-smoked bacon, cut into tiny bits
- 2 medium onions, chopped
- 2 celery ribs, chopped
- 1 medium green bell pepper, seeded and chipped
- 1 garlic clove, minced
- One 28-ounce can whole tomatoes with their juices, chopped
- 1/4 tsp. dried basil, crumbled
- 1 bay leaf
- Salt and freshly ground black pepper to taste
- 2 tsp. Worcestershire sauce
- Tabasco sauce to taste
- 1 pound fresh medium shrimp, shelled and deveined

- 1 head garlic

- 2 red bell peppers

- 1/2 tsp. Dijon mustard
- 1/2 tsp. honey
- Pinch of kosher salt
- 4 Tbsp. extra virgin olive oil

- 1 small head escarole, chopped or torn
- 1 small head red leaf lettuce, chopped or torn
- 2 ounces (sweet or hot) sliced sopressata, cut into small strips or chunks
- 1/2 cup thinly sliced red onion

- 1/3 cup pitted Sicilian (or your favorite variety) olives, chopped
- 2 medium tomatoes, cut into 1/2-inch dice, or 1/2 cup slow-roasted tomatoes
- 2 ounces provolone, cut into 1/4-inch dice (about 1/4 cup)
- 2 ounces mozzarella, cut into 1/4-inch dice (about 1/4 cup)
- Freshly ground black pepper

- 2 eggs
- 3 bananas, mashed
- 1 tsp. vanilla extract
- 2-1/4 cup all-purpose flour
- 1-1/2 tsp. baking powder
- 1/2 tsp. baking soda
- Pecan Topping
- 1 cup chopped pecans
- 2 Tbsp. sugar
- 1 tsp. cinnamon
- Toss together all ingredients until pecans are well coated.
