Chocolate Scotch Bars

Melt margarine, blend in sugar and stir in oats, nuts and vanilla
- 1/2 cup margarine
- 2/3 cup brown sugar
- 2 cups rolled oats
- 1/2 cup chopped nuts or coconut
- 1 tsp vanilla
- 1/2 cup chocolate chips
- 1/4 cup peanut butter
Cracker bars

Place crackers in a single layer on foil-lined 15 x 10 x 1 inch cookie sheet
- 35 soda crackers
- 1/2 cup butter
- 1/2 cup brown sugar
- 8 squares semi sweet chocolate, chopped
- 1 cup pecans, chopped
Chicken Marengo

Brown chicken pieces. Add onion and cook until tender
- 4 chicken quarters
- 1 can tomatoes
- 1 can mushrooms
- 1 green pepper, chopped
- 1 onion, chopped
- 1 tsp oregano
- 1 bay leaf
Cherry Cream Cheese Pie

Mix crust ingredients and press into 8" square pan
- Crust:
- 1/4 cup butter, melted
- 1/4 cup sugar
- 1 1/3 cups graham wafer crumbs
- Filling:
- 1 pkg cream cheese
- 1 can sweetened condensed milk
- 1/3 cup lemon juice
- 1 tsp vanilla

Cranberry Cream Cheese Coffee Cake

Stir topping ingredients together until well mixed
- Crumb topping:
- 3/4 cup flour
- 1/2 cup sugar
- 1/2 cup butter or margarine (I used butter)
- Cream cheese layer:
- 250 g cream cheese, softened
- 1/3 cup sugar
- 1 egg
- 1 tsp. vanilla
- Cake:
- 2 cups flour
- 1 cup sugar
- 1 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 3/4 cup orange juice
- 1/4 cup oil
- 1 tsp. vanilla
- 1 egg
- 2 cups chopped cranberries
- 2 Tbsp. orange rind
Taffy Apple Tartlets

Chop peanuts, set aside. Core and coarsely chop apples
- 1/4 cup dry-roasted peanuts
- 2 large Granny Smith apples, peeled
- 3/4 cup caramel sauce, divided
- 2 Tbsp flour
- 1 pkg refrigerated pie crusts (2 crusts), softened
- 12 caramels, unwrapped

- 1 cup sugar
- 3/4 cup flour
- 2 tsp baking powder
- 1 Tbsp softened butter
- 1/2 cup evaporated milk
- 1 tsp vanilla
- 3 cups apples, peeled, cored and diced
- Topping
- 2 Tbsp brown sugar
- 2 Tbsp softened butter
- 1/3 cup flour
