Chicken with Pineapple

Drain pineapple; reserve juice
- 1 can pineapple slices
- 4 chicken breasts
- pepper
- 2 large cloves garlic, pressed
- 1 tsp. thyme, crumbled
- 1 Tbsp. cornstarch
- 1/4 cup honey
- 1/4 cup dijon mustard
Donna's Cornbread

Preheat oven to 400 degrees
- OPTIONAL:
- 2/3 cup cornmeal
- 1 cup flour
- 1/2 cup sugar
- 1 tbsp. Baking powder
- 1 tsp salt
- 2 eggs
- 1/2 cup milk
- 1/4 cup cooking or olive oil
- 1/4-1/2 cup toasted sesame seeds (sprinkle on top)
- 12 oz can creamed corn
Lemon Sauce

Mix sugar and cornstarch. Add water and lemon rind
- 1/2 cup sugar
- 1 Tbsp cornstarch
- 1 cup boiling water
- 1 tsp lemon rind
- 2 Tbsp butter
- juice of 1 lemon

- Topping:
- 1/3 cup brown sugar
- 1/6 cup flour
- 1/8 cup butter
- Muffins:
- 1 1/2 cups flour
- 1/2 cup sugar
- 3 tsp baking powder
- 1/4 tsp salt
- 1 egg
- 1/2 cup milk
- 1/4 cup oil
- 1 cup peaches or strawberries, diced
Chocolate Butterscotch Ripple Squares

Heat butterscotch chips, sweetened condensed milk and 2 Tbsp
- 1 (300 g) pkg Butterscotch chips
- 1 (300 ml) can sweetened condensed milk
- 2 Tbsp. butter
- 2 1/4 cups packed brown sugar
- 2 eggs
- 1 cup butter or margarine, melted (I used half butter and half margarine)
- 1 1/2 tsp. vanilla
- 1 1/2 cups flour
- 2/3 cup rolled oats
- 1/3 cup cocoa
- 1 cup chopped nuts (walnuts, pecans, almonds or hazelnuts)

- 1/2 cup cornstarch
- 1/2 cup icing sugar
- 1 cup flour
- 3/4 cup soft butter
Citrus Dessert

Dissolve jelly powder in boiling water
- 1- 85 g. pkg. lemon or lime jelly powder
- 1 cup boiling water
- 1 3/4 cups graham cracker crumbs
- 1-385 ml can evaporated milk (well chilled)
- 3/4 cup sugar
- juice and rind of 1 lemon

Mix first 5 ingredients and spread in a 9" x 13" pan
- 1 cup flour
- 1 tsp baking powder
- 1 egg
- 1 tsp milk
- 1/2 cup margarine
- raspberry jam
- 1 cup sugar
- 1/4 cup margarine
- 1 egg, beaten
- 2 cups coconut
- 1 tsp vanilla
Coq au Vin

Sauté onions and mushrooms in butter or oil in heavy pan until golden
- 1 cup sliced mushrooms
- 4-8 small shallots or onions, sliced
- 1/3 cup butter or oil
- 5 slices bacon or fat pork
- 1 young chicken, cut in pieces
- 1 clove garlic, crushed
- 1/4 cup all-purpose flour
- 2 1/2 cups red wine OR
- 1 1/4 cups chicken stock and 1 1/4 cups red wine
Salted Chocolate and Caramel Pretzel Bars

Line a large, rimmed baking sheet with parchment paper
- 12 ounce package semi-sweet chocolate chips , good quality chocolate divided into pieces (I like ghiardelli best for melting)
- 8 ounces mini pretzel twists , half of a regular 16-ounce bag
- 11 ounce bags Kraft Caramel Bits , or homemade caramel
- sea salt for sprinkling
