Almond Paste

Makes approximately 4 cups / 2 pounds
- 500 g (~3 1/4 cups) whole, blanched almonds
- 250 g (~1 1/8 cup) unrefined cane sugar
- 75 g (~1/4 cup) honey
- 100 g (~7 tablespoons) water
- 1 tablespoon almond extract OR Kirsch (for a cherry flavor) – optional
Nanaimo Squares

Base: Melt first 3 ingredients over low heat in heavy saucepan
- Base
- 3/4 cup butter (I used 1/2 cup margarine and 1/4 cup butter)
- 1/2 cup sugar
- 1/2 cup cocoa
- 3 eggs
- 1 1/2 tsp vanilla
- 3 cups graham cracker crumbs
- 1 1/2 cups coconut
- 3/4 cup chopped nuts (I used pecans)
- Icing
- 1/2 cup butter
- 2 1/2 cups icing sugar
- 1 1/2 tsp vanilla
- 2 about 2 tsp milk
- Glaze
- 3 squares unsweetened chocolate (3 ounces)
- 1 1/2 Tbsp butter
Chicken in white wine

Place chicken pieces and mushrooms in large dish
- 4 chicken thigh quarters
- 1 can mushrooms
- 1/4 tsp pepper
- 1/2 tsp tarragon
- 1 Tbsp dried parsley
- 3/4 cup white wine

Combine all ingredients by hand till well combined, roll into balls
- 1 cup flour
- 1/2 cup margarine, softened
- 1 c chopped pecans
- 1 tablespoon white sugar
- pinch salt

- 3 egg whites

Cake: Cream butter and sugar
- Filling:
- 1/2 cup butter or margarine
- 1 1/2 cup sugar
- 4 egg whites
- 2 1/3 cups flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1 Tbsp grated orange rind
- 1/4 tsp baking soda
- 3/4 cup cold water
- 1/4 cup orange juice
- 1 cup sugar
- 1/4 cup cornstarch
- 1/2 tsp salt
- 1 Tbsp grated orange rind
- 1 1/2 cups orange juice
- 1/2 cup water
- 4 slightly beaten egg yolks
- 2 Tbsp butter

English Toffee

- 1 cup butter (I only used Imperial but would like to try it with real butter)
- 1 cup white sugar
- 1/2 cup chocolate chips or just a little more
- 1 cup pecans broken into coarse pieces

Combine sugar and milk. Cook slowly, stirring constantly, until mixture boils
- 3 cups brown sugar
- 1 1/2 Tbsp butter
- 1 cup light cream or evaporated milk
- 1 1/2 tsp vanilla
Eastern European Pear, Pecan, and Feta Salad

Wash lettuce; tear into bite sized pieces in large bowl
- 1 head romaine lettuce
- 2 medium "firm ripe" pears, diced
- 150 g feta cheese, cubed or crumbled
- 1/2 small red onion, diced
- 1/2 - 3/4 cup toasted pecans**
- 1/4 cup lime juice
- 1/4 cup liquid honey
- 1 to 2 cloves garlic, crushed
- 1/2 tsp Dijon mustard
- 1/4 cup olive oil or vegetable oil
Sweet and Sour Meatballs

Mix meatball ingredients and form into balls
- Meatballs:
- 1.5 lb ground beef
- 3/4 cup rolled oats
- 2 eggs
- 1/4 cup finely chopped onion
- pepper
- lemon pepper
- Sauce:
- 1 1/2 cups chicken bouillon
- 1/2 cup pineapple tidbits
- 5 Tbsp cornstarch
- 1/2 cup pineapple juice
- 1 Tbsp soya sauce
- 3/4 cup vinegar
- 3/4 cup corn syrup
- 18 maraschino cherries
- 2 green peppers, cubed
