Italian bake

Cut up chicken, onion, peppers and sausage
- 3 pounds chicken breasts (cooked & cut into bite size pieces)
- 6 Italian sausage links
- 2 jars or spaghetti sauce (I use Hunt's in the can - cheaper & just as good!)
- 1 pound of pasta, penne, macaroni, shells or what ever you like
- 1 large package of pizza cheese
- 1 onion
- 2 large bell peppers - red & green, cut into chunks
Orange Chicken (Sweet & Sticky)

GRATE 1 tsp. zest from orange
- 1 large navel orange
- 1/4 cup Kraft Signature Asian Sesame Dressing
- 2 Tbsp. lite soy sauce
- 2 Tbsp. sugar
- 1/2 tsp. crushed red pepper
- 1 lb. (450 g) boneless skinless chicken thighs, cut into bite-size pieces
- 1 Tbsp. minced gingerroot
- 1 clove garlic, minced
- 1 large red pepper, cut into bite-size pieces
- Note: Since stir-frying is done very quickly, be sure to have all your ingredients chopped and ready to go before you begin cooking.
- Substitute: Substitute 2 cups snow peas for the red peppers. Or, use a combination of peppers and snow peas.
- Serving Suggestion: Serve with hot cooked rice
Healthy nachos

Preheat oven to 420. Slice sweet potatoes into wedges
- 3 sweet potatoes
- olive oil
- sea salt
- ground pepper
- 1/3 cup red onion, diced
- 1 lb ground turkey
- 2 tbsp chili powder
- 1 tbsp garlic powder
- 1/2 cup no-salt tomato sauce
- 2.5 oz mashed avocado
- 2.5 oz greek yogurt
- chopped green onions
- 1 oz grated cheese
FRESH BLUEBERRY CHEESECAKE WITH HOMEMADE CRUST

For the crust: Combine all ingredients and press into a sprayed 8 x 8 inch baking pan
- Nutty Graham Cracker Crust:
- 1 cup graham cracker crumbs (Can roll with rolling pin or use food processor until finely ground)
- 1/2 cup old-fashioned rolled oats (Could use quick-cooking oats)
- 1/2 cup ground walnuts or nuts of your choice
- 2 tablespoons brown sugar
- 1/2 cup butter or margarine or 8 tablespoons, melted
- Filling:
- 1 (8 ounce package) cream cheese, softened
- 1 (14 ounce) can sweetened condensed milk (Not evaporated milk)
- 1/3 cup lemon juice
- 1 teaspoon vanilla extract
- Combine ingredients and mix on high for 3 or 4 minutes. Pour over cooled crust. Refrigerate for 3 hours.
- Fresh Blueberry Topping:
- 2 cups fresh blueberries (you could use frozen)
- 1/2 cup sugar
- 1 tablespoon cornstarch
- 1/4 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/2 cup water
- 1 tablespoon lemon juice
Roasted Mushrooms & Balsamic Onions

Preheat oven to 450 Combine mushrooms and onions in large bowl; season to taste with salt and pepper
- 5 oz shitake mushrooms, sliced (3 cups)
- 1 pkg. (10 oz) baby belle mushrooms halved
- 1 lb (16oz) portabella mushrooms, 1 inch dice (about 7 cups)
- 1 jar (10oz) Italian Classics Balsamic Onions, drained and halved
- Sea salt & pepper to taste
- 1/2 cup (4oz) basting oil
