Yogurt Hollandaise Sauce

- 1 tsp lemon juice

- 1 pound (20-25 or 16-20) shrimp, peeled and deveined
- 1/2 cup jerk marinade (separate recipe)
- 2 slices pineapple, cut into 1/2 inch pieces
Salted Caramel Butter Bars

In a large bowl, combine the butter and sugars
- For the Crust:
- 1 lb. butter, softened
- 1 cup sugar
- 1 1/2 cups powdered sugar
- 2 tablespoons vanilla
- 4 cups flour
- For the Filling:
- 1 bag (14 oz.) caramel candies (about 50 individual caramels), unwrapped
- 1/3 cup milk or cream or half and half
- 1/2 teaspoon vanilla
- 1 tablespoon coarse sea salt

- 1 can (15 ounces) Bush’s Black Beans, drained and rinsed
- 1/2 cup dark chocolate chips
- 1/4 cup all-purpose flour
- 1 cup white sugar
- 1/4 cup unsweetened cocoa
- 1/2 tsp. baking powder
- 1/4 tsp. baking soda
- 1/2 tsp. kosher salt
- 2 large eggs
- 3 tbsp. vegetable oil
- 1 1/2 tsp. vanilla extract
- 1 piece of parchment paper
- butter, soften for greasing pan
- 1/4 cup dark chocolate chips
- 1/4 cup chopped walnuts
Rhubarb Dream Bars

Preheat the oven to 350 degrees F (175 degrees C)
- 2 c. flour
- 1 c. butter
- 2/3 c. powdered sugar
- 4 eggs
- 3 c. sugar
- 1/2 c. flour
- 1 1/2 tsp. salt
- 4 1/2 c. chopped fresh rhubarb
Blueberry Grunt

Mix together. The dough will be lumpy
- Sauce:
- 2 cups blueberries
- 1/2 cup water
- 1/2 cup sugar
- 1/2 tsp vanilla
- Mix above ingredients, then cook over medium heat until mixed and heated thoroughly and lots of juice has formed.
- Dumpling Dough:
- 1 1/2 cup flour
- 3 tsp baking powder
- 1/2 tsp salt
- 2 eggs
- 1/3 cup milk
Creamy Avocado Cilantro Lime Dressing

Place all the ingredients In a food processor or blender
- 1 Avocado
- 1 clove Garlic, peeled
- 1/4 cup roughly chopped cilantro
- 1/4 cup low-fat sour-cream or greek yogurt
- 1 tablespoon fresh lime or lemon juice (or white vinegar)
- 3 tablespoons Olive Oil
- 1/4 teaspoon Kosher Salt
- 1/4 teaspoon Ground Black Pepper

Mozzarella Chicken In Tomato Sauce

- 1 teaspoon dried basil leaves
- 1 teaspoon dried parsley leaves
- 1/2 teaspoon ground oregano
- Salt and freshly ground black pepper
- 1 tablespoon olive oil
- 2-3 skinless and boneless chicken breasts, halved to make 4 to 6 fillets
- 1 teaspoon minced garlic
