CLASSIC BAKED VEGAN MAC AND CHEESE

This classic vegan mac and cheese is ultra cheesy, saucy and creamy
- For the Macaroni:
- 1/2 cup (112g) Vegan Butter
- 6 Tbsp All Purpose Flour
- 3 14oz (400ml) Cans Coconut Milk (1200ml in total)
- 1 cup (240ml) Vegetable Stock
- 3 Tbsp Dijon Mustard
- 1 cup (60g) Nutritional Yeast
- 3 tsp Onion Powder
- 3 tsp Garlic Powder
- 1 and 1/2 tsp Smoked Paprika
- 1 and 1/2 tsp Salt
- 1 and 1/2 tsp Ground Black Pepper
- 1 18oz (500g) Pack Elbow Macaroni*
- For the Breadcrumb Topping:
- 3 Thick Slices White Bread (Toasted)
- 2 Tbsp Vegan Butter (Melted)
Lemon Raspberry Coffee Cake

Preheat oven to 350 degrees
- Coffee Cake:
- 2 c. all purpose flour
- 2 1/2 tsp. baking powder
- 1/4 c. milk
- 3/4 c. sugar
- 1/2 c. sour cream or plain Greek yogurt
- 1/4 c. butter softened
- 1 large Phil's Fresh Egg
- 2 Tbsp. lemon juice
- optional: 1/2 tsp. lemon extract
- 1 Tbsp. finely grated lemon peel
- 1 1/2 c. fresh raspberries
- Crumb Topping:
- 1 c. sugar
- 2/3 c. flour
- 6 Tbsp. softened butter
- Glaze:
- 1/2 c. powdered sugar
- 1 Tbsp. lemon juice
FROZEN BANANA CREAMS.

Add the frozen bananas, coconut milk and vanilla extract to a blender and blend until pureed and thick and creamy
- 4 frozen bananas
- 1 can cold full-fat coconut milk
- 2 teaspoons vanilla extract
- 2 bananas, sliced
- graham crumbs
- 2 tablespoons coconut oil, melted
- 1 cup graham cracker crumbs
- pinch of salt
- coconut whipped cream
- 1 can full-fat coconut milk, refrigerated overnight
- 1 teaspoon vanilla extract, if desired
VEGAN CAULIFLOWER SOUP

Ultra creamy vegan cauliflower soup
- 1 Tbsp Olive Oil
- 1 Onion (Chopped)
- 1 tsp Crushed Garlic
- 1 tsp Dried Thyme
- 1/2 tsp Dried Rosemary
- 1 Large Head Cauliflower (chopped)*
- 2 cups (480ml) Vegetable Stock
- 1 14oz (400ml) Can Coconut Milk
- Salt and Pepper (To Taste)

CHOCOLATE MACAROON PIE

Chocolate Macaroon Pie – this easy macaroon recipe is baked into a pie crust and then filled with a rich chocolat
- For the filling:
- 2/3 cup all purpose flour (may substitute 1:1 GF All Purpose Flour)
- 5 1/2 cups shredded sweetened coconut
- 1/2 teaspoon salt
- 1 can (14 ounces) sweetened condensed milk
- 2 teaspoons vanilla extract
- 1 teaspoon almond extract (optional)
- 2 cups (12 ounces) semi-sweet or dark chocolate chips
- 1 cup heavy whipping cream
Lobster Avocado Salad

On a platter arrange slices of avocado, lobster meat, red onions slices and grapes
- Citrus Vinaigrette:
- 4 1-1/4 lb lobsters, cooked, shelled
- 4 ripe avocados, peeled, cored, sliced
- 1 red onion thinly sliced
- 1 cup seedless green grapes, halved
- Citrus Vinaigrette
- juice of 3 navel oranges
- zest of 1 orange
- juice and zest of 1 lemon
- 1 tbsp honey
- 1 tsp minced ginger
- 1 tsp minced garlic
- 2 tbsp minced fresh parsley
- 1/3 cup olive oil
- Place all ingredients In a bowl, slowly whisk in oil. Season with salt and pepper to taste.
