CRANBERRY TURKEY ROLL-UP

Place tortilla on a large plate and microwave for 10–20 seconds
- 1 10-inch 100% whole-grain tortilla (about 190 calories)
- 2 tablespoons (35 g) canned whole-berry cranberry sauce
- 3 thin slices (85 g) deli turkey breast
- 1/2 medium (60 g) tomato, halved and sliced
- 3 small lettuce leaves, washed
- 1 slice (28 g) Swiss cheese, halved

Vietnamese Rice Paper Rolls (Spring Rolls)

Vietnamese Rice Paper Rolls are incredibly fresh and healthy
- 7 - 14 sheets of 22cm/8.5" round rice paper (Note 1)
- 11 small cooked prawns/shrimp (about 12cm/5" in length, unpeeled including the head)
- 50 g / 1.5 oz dried vermicelli noodles
- 7 lettuce leaves - use a lettuce with soft leaves, like Oak or Butter Lettuce (Note 2)
- 14 mint leaves
- 1 cup bean sprouts
- Vietnamese Peanut Dipping Sauce
- 1 tbsp peanut butter, preferably smooth (crunchy is ok too)
- 2 tbsp Hoisin Sauce
- 1 1/2 tbsp white vinegar (or lime juice)
- 1/3 cup milk (any fat %) (or water) (Note 3)
- 1 garlic clove, minced
- 1/2 tsp crushed chilli, samba oelak or other chilli paste, adjust to taste (optional)

- 1 and 1/2 cups (225g) Raw Cashews (Soaked in hot water for 1 hour)*
- 2 Tbsp Lemon Juice
- 1/2 cup (120ml) Coconut Cream
- 1/3 cup (80ml) Water
- 1 tsp White Vinegar
- 1 tsp Salt
- 1 Tbsp Nutritional Yeast

- 8oz (220g) Extra Firm Tofu (Crumbled)

Taco Stuffed Peppers

- 6-8 Medium/Large Bell Peppers - ensure they have a flat base so they will stand up when cooking
- 1 lb Ground Beef
- 1 Medium Yellow Onion - Diced
