Peach Bellini Winesicles

Raspberry, Almond, and Coconut Overnight Oats

In a glass mason jar, mix the oats with the milk, cinnamon, honey, raspberries, and almond extract
- ½ a cup of rolled oats
- ½ a cup of raspberries
- ½ a cup of unsweetened coconut milk
- 1 teaspoon of shredded coconut
- 1/8 teaspoon of almond extract
- ½ a tablespoon of sliced almonds

VEGAN WELLINGTON

This vegan wellington is perfect for a special occasion
- For the Mushrooms:
- 1 Tbsp Olive Oil
- 1 Onion (Chopped)
- 1 tsp Crushed Garlic
- 1 tsp Dried Rosemary
- 1/2 tsp Coriander Powder
- 1/2 tsp Dried Thyme
- 1/2 tsp Oregano
- 1 pack (~9oz/250g) White Button Mushrooms (sliced)
- 1 pack (~9oz/250g) Brown (Portobellino) Mushrooms (sliced)
- 2 Portobello Mushrooms (sliced)
- 2 Tbsp Soy Sauce
- For the Cashew Cream:
- 1 cup (150g) Raw Cashews
- 1/2 cup (120ml) Water
- 1/2 tsp Salt
- For assembling the Wellington:
- 1 Sheet Puff Pastry (thawed)
- 1-2 Tbsp Vegan Butter (melted, for brushing)
- For Decorating:
- Fresh Rosemary

- 3 1/2 tbsp pure maple syrup, honey, or agave
- 2 tbsp virgin coconut oil
- 1/2 tsp pure vanilla extract

- 3 oz chocolate chips (see substitution below)

- 1 lb ground beef
- 2 -3 stalks celery, chopped
- 1 small onion, chopped
- 1 (8 ounce) can tomato sauce
- 1 ⁄4 cup ketchup
- 1 ⁄4 cup barbecue sauce (your favorite, we use Open Pit)
- 1 tablespoon firmly packed brown sugar (we found BBQ sauce sweetened enough, so omitting sugar)
- 1 teaspoon dry mustard
- salt and pepper
- 1 tablespoon Worcestershire sauce
- 1 tablespoon vinegar

- 2 cups flour
- 1 cup sugar
- 6 tbsp cocoa

- Mix all ingredients well. Drop by teaspoon onto greased pan. Bake at 350 for ten minutes.
