Veggie Tortilla Roll-Ups

In medium bowl, mix all ingredients except tortillas
- 1 package (3 oz) cream cheese, softened
- 1/2 cup sour cream
- 1/2 cup finely shredded Cheddar cheese (2 oz)
- 1/4 cup finely chopped red bell pepper
- 2 tablespoons sliced ripe olives, chopped
- 1 tablespoon chopped fresh parsley
- 3 flavored or plain flour tortillas (8 to 10 inch)

Frozen Cherry Mousse

1. Line a loaf pan with a ribbon of parchment paper, large enough that the paper hangs out over the pan edges
- 2 1/2 cups pitted fresh cherries (about 1 lb. whole cherries)
- 3/4 cup superfine sugar
- 2 tsp vanilla
- 1/2 tsp almond extract
- 1 envelope gelatin
- 1/4 cup boiling water
- 1 1/2 cups whipping cream
- 1 cup thick Greek-style plain yogurt (not low fat)
- Fresh raspberries for serving
- Chrushed pistachios for serving
- Liquid honey for serving
BLACKBERRY COBBLER

- 1 1/2 1 1/2 1/2 cups all-purpose flour
- 1/2 1/2 1/2 cup sugar
- 1 1/2 1 1/2 1/2 teaspoons baking powder
- 1/2 1/2 1/2 teaspoon salt
- 1 1 1 teaspoon cinnamon
- 9 9 9 tablespoons cold butter
- 1/3 1/3 1/3 cup boiling water
- 2 2 2 tablespoons corn starch
- 1/4 1/4 1/4 cup cold water
- 1 1 1 tablespoon lemon juice
- 4 4 4 cups fresh blackberries (or mixed berries)
- 1/2 1/2 1/2 cup sugar

In a blender, pulse 1 1/2 cups of the oats until a flour like consistency
- 2 cups rolled oats
- 1/2 cup protein powder. Clean Protein Powder was used in this recipe
- 1/2 cup mini chocolate chips (Enjoy Life was used in this recipe)
- 1/2 cup chia seeds or ground flax seeds
- 1/2 cup raisins
- 1 cup natural peanut butter
- 1/2 cup lite coconut milk, (more or less as needed to reach desired consistency)
- 1/4 cup honey (raw honey if possible)
