Rinse quinoa thoroughly under cold water and drain
- 2 cups red and white quinoa (mixed)

- 1 tablespoon extra-virgin olive
- 1/3 cup extra-virgin olive oil, more as needed
- 3 tablespoons white vinegar or 3 tablespoons rice vinegar, more as needed
- 3 tablespoons fresh lemon juice, more as needed
- 1 -2 tablespoon finely grated lemon zest
- fresh ground black pepper
- 3/4 cup chopped roma tomato
- 3/4 cup diced English cucumber (1/2 inch dice)
- 1/2 cup thinly sliced scallion
- 3/4 cup diced red bell pepper (1/4 inch dice)
- 1 cup cooked red lentil
- 1 cup cooked mung beans
- 2 tablespoons chopped fresh cilantro (leaves and stems)
- 2 tablespoons chopped fresh flat-leaf parsley
ONE POT CILANTRO LIME RICE (WITH BLACK BEANS)

Heat 2 tablespoons olive oil in a large nonstick skillet over medium heat
- 2 tablespoons olive oil
- 1/2 cup chopped red onion
- 1-2 jalapenos, chopped, seeded and deveined (optional)
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 1/2 cups long grained rice, rinsed and drained
- 3 cups low sodium chicken broth (may sub vegetable broth)
- 1 14.5 oz. can black beans, rinsed and drained (optional)
- 3 tablespoons mild diced green chilies (from 4 oz. can green chilies)
- Freshly cracked salt and pepper to taste

- 2 lbs. lean ground beef
- 1 qt. water
- 2 med. onions, minced
- 5 whole (or 3 tsp of ground) allspice
- 1/4 tsp. ground red pepper
- 1 tsp. cumin
- 4 tbsp. chili powder
- 1 tsp. cinnamon
- 1/2 oz. unsweetened baking chocolate
- 4 cloves garlic
- 2 tbsp. vinegar
- 1 bay leaf
- 5 whole cloves
- 2 tsp. Worcestershire sauce
- 1 1/2 tsp. salt
- 1 can tomato paste
- 1 can black beans, drained and rinsed
- 1 can corn niblets
- I have had to add extra water for desired consistency.
