- 1 pie crust, cooked
- 3 tomatoes, 1/2 inch slices
- 1 tbsp hot mustard
- 1 cup grated cheese
- 1 tbsp basil
- 2 tbsp grated parmesan
- 2 tbsp melted butter
- Pepper to taste
Kung Pao Lentils

Spicy Kung Pao Lentils with a delicious kung pao sauce, veggies and cooked lentils
- LENTILS:
- 1/2 cup dry brown lentils washed and drained
- 1 1/2 cups water
- A generous pinch of salt
- SAUCE:
- 2 to 3 tablespoons soy sauce
- 2 tablespoons rice wine vinegar
- 1 tablespoon dry sherry or rice wine
- 1 teaspoon hoisin sauce or use more soy sauce
- 1 teaspoon toasted sesame oil
- 2 to 3 teaspoons raw sugar or use 1 to 2 tablespoons maple syrup or other sweetener
- A generous dash of lime zest 1/4 teaspoon
- 2 teaspoons cornstarch
- 3 tablespoons water
- VEGETABLES:
- 2 teaspoons grapeseed oil or other neutral oil
- 1/2 cup white or red onion, chopped
- 4 dried red chilies like arbol or red chinese broken into halfs (or use red pepper flakes to taste)
- 3 tablespoons cashews or peanuts
- 3 cloves garlic, minced
- 1 inch knob ginger, minced
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 3/4 cup celery, chopped
- Lemon juice and black pepper for garnish
Apple Raspberry Green Smoothie

Add greens and liquid to your blender and blend first
- 1 handful/cup (approx) dark, leafy greens
- 2/3-1 cup unsweetened almond milk (or milk of your choice)
- 1 Apple (cored)
- 1/2 cup raspberries (fresh or frozen)
- 1 serving vanilla protein powder
PEANUT BUTTER ENERGY BITES

In a medium mixing bowl, stir together all of the ingredients
- 1 3/4 cup oats (old-fashioned or quick cooking)
- 3/4 cup all-natural peanut butter (If your natural peanut butter has been refrigerated and is thick, try popping the measuring cup of peanut butter in the microwave for 10-15 seconds)
- 1/3 cup honey (or slightly more if needed to bind mixture together)
- 1/3 cup semisweet or dark chocolate chips (I used mini)
- Optional: 1/4 cup wheat bran, hemp seeds, flax seeds, or chia seeds (I used hemp seeds)
Peanut Tofu Curry with Rice

An easy to make Thai Curry with tofu; this Peanut based sauce is super yummy and easy to make
- For the Curry
- Firm Tofu 1 block (14 oz)
- Onion 1/4 medium, diced
- Pepper 1/2 medium, diced
- Garlic 2 cloves, minced
- Peanut Butter 2 tbsp
- Red Curry Paste 2 tbsp
- Coconut Milk 1 cup
- Cashew nuts 6-7
- Chilli Oil 1 tsp
- Vegetable Oil 2 tsp
- Sriracha Garlic Sauce 1 tsp
- Soy Sauce 1 tsp (tamari for Vegan)
- Salt 1 tsp
- Sugar 1/4 tsp
- Lime juice to taste
- Spring Onion and cilantro to top
- For the Rice
- White Rice 1 cup
- Water 1 cup and 2 tbsp
- Oil 1 tsp
- Salt 1/2 tsp
