Neely's Potato Salad

Boil cubed potatoes until they are tender
- 5 large red potatoes, peeled and cubed
- 2 ribs celery, chopped
- 1/2 large onion, chopped
- 3 hard-boiled eggs, 2 chopped and 1 sliced
- 2 heaping tablespoons sweet pickle relish, drained
- 1/2 cup salad dressing, (recommended: Miracle Whip)
- 3 tablespoons yellow mustard
- 1 tablespoon sugar
- Paprika, for garnish
- Salt
Butternut Squash Risotto

Toast pine nuts in a small, dry skillet over medium heat until golden, about 5 minutes; set aside
- 1/4 cup pine nuts
- 2 tbsp. + 1 tsp. olive oil
- 1 medium butternut squash (about 2 lbs.), peeled, seeded (fibers and seeds reserved) and cut into 1/2″ cubes
- 3/4 tsp. table salt
- 3/4 tsp. freshly ground black pepper
- 4 cups chicken or vegetable broth (use vegetable for a 100% vegetarian meal)
- 1 cup water
- 4 ounces baby spinach
- 4 tbsp. unsalted butter
- 1 medium yellow onion, diced (about 1 1/2 cups)
- 2 medium cloves of garlic, minced
- 2 cups Arborio rice
- 1 1/2 cups dry white wine (I used Pinot Grigio)
- 1 1/2 ounces finely grated Parmesan cheese (about 3/4 cup)
- 2 tbsp. minced fresh sage
- 1/4 tsp grated nutmeg

- 1 1/2 Tbsp parsley, chopped
- 1 large can black olives, chopped
- 1 lb ground veal
- 1/2 cup hot italian sausage
- 1 garlic clove, minced
- 1/2 cup onion, finely chopped
- 1 egg
- 3/4 cup dried breadcrumbs
- 1/2 cup parmesean cheese
- 1/8 cup Italian seasoning
