Chicken Curry in a Hurry (Rachael Ray)

Prepare rice to package directions
- For spicy rice:
- 1 teaspoon each coriander seeds, cumin seeds, mustard seeds
- 2 cups basmati rice, prepared according to package directions
- 3 tablespoons vegetable or canola oil, 3 turns of the pan
- 1 1/3 to 1 1/2 pounds chicken breast tenders, diced
- 2 to 4 cloves garlic, minced, mild to extra spicy
- 1 to 2 inches fresh ginger root, minced or grated, mild to extra spicy
- 1 large yellow skinned onion, peeled and chopped
- 1 can chicken broth, about 2 cups
- 2 tablespoons curry paste, mild or hot
- 1/3 to 1/2 cup mincemeat
- Coarse salt
- 2 tablespoons flour
- Toppings and garnishes, mix and match:
- 4 scallions, chopped
- 1 cup toasted coconut
- 1/2 cup sliced almonds or Spanish peanuts
- 1 cup prepared mango chutney
- 1 /4 cup finely chopped cilantro leaves

- 2 tsp salt

Beat butter & cream cheese until creamy
- 1 1/2 c butter, softened
- 1 pkg cream cheese, softened
- 3 c sugar
- 6 lg eggs
- 3 c flour
- 1/2 t salt
- 1/4 c bourbon
- 1 1/2 t vanilla extract
- 1 c chopped pecans, toasted
- 1/2 c shredded coconut
Broccoli Stir Fry with Ginger and Sesame

1 Toast the sesame seeds by first heating a small, stick-free sauté pan on medium heat
- 1 Tbsp sesame seeds
- 1/2 cup chicken stock (or vegetable stock for vegetarian option)
- 1 Tbsp soy sauce (use gluten-free soy sauce for gluten-free option)
- 1 Tbsp dark sesame oil
- Peanut, canola, or grapeseed oil, or some other high smoke-point cooking oil
- 1 pound broccoli florets, rinsed, patted dry, cut into bite-sized pieces
- 2 cloves of garlic, minced (about 1 Tbsp)
- 1 Tbsp minced fresh ginger
Spicy Chex Mix

Mix all together. Spread on cookie sheet and bake 350 degrees for 15 minutes
- 10-12 oz Chex, pretzles, nuts, etc...
- 1/4 cup oil
- 1 Tbsp garlic salt
- 1 Tbsp lemon pepper seasoning
- 1 tsp cayenne
- 1 pkg ranch dressing mix
