- 1 pkg. phyllo dough, defrosted
- 1 stick unsalted butter, melted
- 1 bunch green asparaus, trimmed

- coarse ground black pepper
- 1/2 cup mayonnaise
- 1 T. grated horseradish
- 1 t. capers, minced
- 2 t. whole seed mustard
- salt and pepper to taste

- 1/2 cup beef broth
- 4 T. ketchup
- 1 t. Worcestershire sauce
- 1 t. Dijon mustard
- 1/8 t. pepper

Cheesy Chicken Roll-Ups

- Note:
- 4 skinless, boneless chicken breasts
- 4 thin slices boiled or baked ham
- 10 T. garlic and herb cheese spread, divided
- 1/3 cup milk
- 1/2 cup seasoned bread crumbs
- 1/2 cup light cream or half-and-half
- Thin slices of Swiss or Muenster cheese can be substituted for garlic and herb cheese spread.
Welsh Rarebit

Cook bacon until crisp. When cooled, crumble into bits and reserve
- 1/2 lb. bacon
- 1 T. butter
- 1 T. flour
- 3/4 cup milk
- 1/4 cup heavy cream
- dash paprika
- cayenne pepper, to taste
- 3/4 t. dry mustard
- 2 t. Worcestershire sauce
- 2 cups sharp cheddar, shredded
- 1 cup cherry tomatoes

- 6 cups of homemade meaty spaghetti sauce
- or
- 1 24 oz. jar prepared spaghetti sauce + 1/2 lb. browned ground beef + 1/2 lb. browned Italian sausage or 1 lb. of one or the other
- 1/2 bag (4.5 oz.) fresh spinach leaves, torn into pieces
- 4 cups chicken broth
- 8 oz. cream cheese
- 8 oz. sliced fresh mushrooms
