Salted Oatmeal Chocolate Chip Cookies

Preheat oven to 325 degrees
- 1 cup (2 sticks) unsalted butter, softened
- 1 cup packed light brown sugar
- 1/2 cup white sugar
- 2 large eggs
- 2 t. vanilla extract
- 1 1/4 cups flour
- 1/2 t. baking soda
- 1 t. (1/2 for dough - 1/2 to sprinkle on top) Morton all-purpose natural sea salt
- 3 cups instant oats
- 1 cup semi-sweet chocolate chips
Spinach & Artichoke Dip

Combine the cream cheese and half and half in a bowl until well blended
- 2 pkgs. (8 oz. ea.) cream cheese, softened
- 1 T. onion, finely chopped
- 1/2 cup Parmesan cheese, grated
- 1 bag (10 oz.) frozen cut spinach, thawed and well drained
- 1 can (13 oz.) quartered artichoke hearts, rinsed, drained and chopped
- 2/3 cup Monterey Jack cheese, shredded
- 3/4 cup half and half
- 1 clove garlic, minced
Banana Cake with Vanilla Frosting

To make cake (easily mixed by hand): Preheat the oven to 375F (see note below)
- Cake:
- 2/3 cup sugar
- 1/2 cup sour cream
- 1 egg
- 2 T. butter, softened
- 3/4 cup mashed bananas
- 1 t. vanilla extract
- 1 cup flour
- 1/4 t. salt
- 1/2 t. baking soda
- Frosting:
- 2 T. butter, softened
- 1/4 cup heavy cream
- 1/2 t. vanilla bean paste (or extract)
- 1 1/4 cups powdered sugar
Spinach Chicken Rolls

Preheat oven to 375 degrees
- 4 skinless, boneless chicken breast halves
- 1 egg white
- 1/2 of a 10-oz. pkg. frozen chopped spinach, thawed and well drained
- 1 cup shredded mozzarella cheese
- 1/3 cup cream-style cottage cheese, drained
- 1 1/4 cups spaghettti sauce with garlic and herbs
- 2 T. tomato paste
- 6 oz. spaghetti, cooked and drained
Lemon Pork Chops

Dredge pork chops in flour and place in baking dish
- 6 or 8 pork chops
- garlic powder
- 1 cup flour
- juice of 1 large lemon
- salt and pepper to taste
Pebble Snacks / Cocoa Pebble Snacks

- ¼ cup (½ stick) butter
- 1 pkg. mini marshmallows (6 cups)
- 1 pkg. fruit pebbles or cocoa pebbles (8 ½ cups)
Appetizer Roll-Ups

In a bowl, combine the cream cheese, peppers and garlic
- Roast Beef:
- 4 oz. cream cheese, softened
- 2 to 3 T. minced banana peppers
- 1 garlic clove, minced
- 1/2 lb. thinly sliced cooked roast beef
- Ham and Turkey:
- 12 oz. cream cheese, softened
- 1/2 cup shredded carrot
- 1/2 cup shredded zucchini
- 4 t. dill weed
- 1/2 lb. thinly sliced fully cooked ham
- 1/2 lb. thinly sliced fully cooked turkey
Apple Stuffed French Toast

In a small saucepan, combine the brown sugar, butter and corn syrup; cook and stir over medium heat until thickened
- Caramel Sauce:
- 1 cup packed brown sugar
- 1/2 cup butter, cubed
- 2 T. light corn syrup
- 1 cup chopped pecans
- 12 slices bread (1/2" thick)
- 2 large tart apples, peeled and thinly sliced
- 6 eggs
- 1 1/2 cups milk
- 1 1/2 t. ground cinnamon
- 1 t. vanilla extract
- 1/4 t. salt
- 1/4 t. ground nutmeg
- 1/2 cup packed brown sugar
- 1/4 cup butter, cubed
- 1 T. light corn syrup
Hamburger Minestrone

In a large pot, cook the beef, onion and garlic over medium heat until meat is no longer pink; drain
- 1 lb. lean ground beef
- 1/2 cup chopped onion
- 1 garlic clove, minced
- 6 cups water
- 1 can (28 oz.) diced tomatoes, undrained
- 1 1/2 cups sliced zucchini
- 1 can (16 oz.) kidney beans, rinsed and drained
- 1 1/2 cups frozen whole kernel corn, thawed
- 1 cup shredded cabbage
- 1 celery rib with leaves, chopped
- 2 t. beef bouillon granules
- 2 t. Italian seasoning
- 3/4 t. salt
- 1/2 cup uncooked elbow macaroni

In a blender or food processor, combine the vinegar, sigar, 1/2 cup blue cheese, onion, mustard, garlic and salt
- 1 cup cider vinegar
- 1/4 to 1/2 cup sugar
- 1/2 to 1 cup crumbled blue cheese, divided
- 1 small onion, chopped
- 1 T. Dijon mustard
- 2 garlic cloves, minced
- 1/2 t. salt
- 1 cup vegetable oil
