- 4 cans (10 oz. each) enchilada sauce, divided
- 1 jar (16 oz.) salsa, divided
- Vegetable oil
- 28 corn or flour tortillas
- 4 cups (16 oz.) shredded cheddar cheese
- 2 cans (2 1/4 oz. each) sliced ripe olives, drained
Rich & Easy Cake

- 1 box yellow cake mix
- 2 (3 oz.) boxes instant vanilla pudding
- 1 (15 oz.) can crushed pineapple
- 1 cup sugar

Easy Alfredo Sauce

- 1/2 cup butter
- 1 (8 oz.) pkg. cream cheese
- 2 t garlic powder
- 2 cups milk
- 6 oz. grated Parmesan cheese
- 1/8 t ground black pepper
Double Chocolate Cake

Heat oven to 350 degrees. Grease and flour three 8-inch round cake pans
- Frosting:
- 3 cups all-purpose flour
- 1 T. baking powder
- 1/2 t. salt
- 6 oz. white chocolate
- 3/4 cup heavy cream
- 1 cup butter, softened
- 3/4 cup sugar
- 6 egg whites
- 1/2 cup butter, softened
- 1 lb. powdered sugar
- 1/2 cup cocoa powder
- 1/2 cup milk
- 4 oz. unsweetened chocolate, melted
- 2 t. vanilla
Parmesan Salad Dressing

In a large bowl, combine all ingredients
- 5 qts. buttermilk
- 4 qts. mayonnaise
- 64 oz. sour cream
- 3 pounds grated Parmesan cheese
- 1 cup Worcestershire sauce
- 1 cup minced chives
- 3 T. ground mustard
- 3 T. minced garlic
- 1 T. salt
- 1 T. pepper
Orange Delight

In a large bowl, pour boiling water over gelatin and stir until dissolved
- 2 cups boiling water
- 1 can (13 oz.) pineapple chunks, drained
- 1 box (6 oz.) orange Jello
- 1 pint orange sherbet
- 1 cup miniature marshmallows
- 2 cans (11 oz. ea.) Mandarin orange segments, drained
- 1 cup sour cream

- 1/2 cup (1 stick) butter or margarine
- 4 squares unsweetened baking
- chocolate, chopped
- Additional granulated sugar
Salmon with Orange Vinaigrette

- 1 cup orange juice
- 4 1/2 t. finely chopped red onion
- 4 1/2 t. lime juice
- 1 t. chili powder
- 1 t. honey Dijon mustard
- 1/2 cup Italian salad dressing
- 4 salmon filets
- S&P to taste
- 1 T. olive oil
