Chicken Tortilla Soup

Heat oil in a stockpot. Add zucchini and saute for 2 minutes
- 1 t. olive oil
- 2 zucchini, cubed
- 1 can (29 oz.) crushed tomatoes
- 6 cups chicken broth
- 1 cup fresh or frozen corn
- 1 1/2 t. cumin
- 1/2 t. cayenne pepper
- 1 rotisserie chicken, meat pulled off and shredded
- For serving: tortilla chips, lime quarters, avocado slices, shredded monterey jack cheese, sour cream

Combine first 5 ingredients in a heavy saucepan; bring to a full rolling boil over medium heat, stirring constantly
- 1 1/2 cup sugar
- 2/3 cup evaporated milk
- 3 T. instant coffee granules

- 2 cups mini marshmallows
- 2 cups semi-sweet chocolate chips
