Beef and Broccoli Stir-Fry

In a small bowl, combine soy sauce, lemon juice, cornstarch, brown sugar, garlic and pepper
- 1/2 cup soy sauce
- 2 T. lemon juice
- 1 T. cornstarch
- 1 T. firmly packed brown sugar
- 1 clove garlic, crushed
- 1 t. black pepper
- 2 T. vegetable oil, divided
- 2 lb. top sirloin, sliced 1/4” thick
- 1 medium onion, thinly sliced
- 2 medium heads broccoli
- 2 t. grated fresh gingerroot (or a pinch of dried ginger)
Ziploc Smoothie

Make your Ziploc smoothie packs, each containing one banana and one cup of fruit
- Optional ingredients:
- 1 Ziploc
- 1 banana
- 1 cup assorted berries/fruit
- 2 cup baby spinach
- 1 cup milk (almond, dairy, coconut or soy)
- 1/2 tsp cinnamon
- 2 tbsp chia seeds
- 1 scoop protein powder
- Honey, Stevia or Agave to sweeten if needed
Eggroll Wraps

Stir-fry meat and ginger in skillet over high heat until lightly browned, 2-3 minutes
- 1 pkg. egg roll wraps
- 1 lb. lean ground pork
- 1 t. minced ginger
- 2 cups cabbage, finely chopped
- 1/4 lb. bean sprouts
- 1/2 cup carrot, shredded
- 3 green onions, finely chopped
- 2 T. oyster sauce
- Canola oil if frying
- Cooking spray and olive oil if baking
- sauce for dipping
Brownies with Rich Chocolate Frosting

Make brownies: Preheat oven to 350 degrees
- Brownies:
- 8 T. unsalted butter
- 4 oz. unsweetened chocolate, chopped
- 1 cup sugar
- 1/4 cup packed brown sugar
- 1 t. vanilla extract
- 3 large eggs
- 3/4 cup all-purpose flour
- 1/4 cup unsweetened cocoa
- 1/2 t. baking powder
- 1/4 t. salt
- Frosting:
- 2 T. unsweetened cocoa
- 1/4 cup powdered sugar
- 3 oz. bittersweet chocolate, finely chopped
- 1/2 cup heavy cream

Sprinkle 1/4 cup cheese into the pastry shell
- 1 cup (4 oz.) shredded cheddar cheese, divided
- 1 unbaked pastry shell (9 inches)
- 1 cup diced, cooked chicken
- 1 pkg. (10 oz.) frozen, chopped spinach, thawed and squeezed dry
- 1/4 cup finely chopped onion
- 2 eggs
- 3/4 cup milk
- 3/4 cup mayonnaise
- 1/4 t. salt
- 1/8 t. pepper
Crock Pot Chicken Taco Chili

Combine beans, onion, chili peppers, corn, tomato sauce, cumin, chili powder and taco seasoning in a slow cooker
- 1 onion, chopped
- 1 16-oz can black beans
- 1 16-oz can kidney beans
- 1 8-oz can tomato sauce (used a 16 oz can)
- 10 oz package frozen corn kernels (used 2 small cans of corn kernels)
- 2 14.5-oz cans diced tomatoes w/chilies (used a 28 oz can of diced tomatoes)
- 1 packet taco seasoning
- 1 tbsp cumin
- 1 tbsp chili powder (used a bit more as I didn't have any chilies in my tomatoes)
- 24 0z. (3) boneless skinless chicken breasts
- chili peppers, chopped (optional)
- chopped fresh cilantro
Butterscotch Swirl Cake

In a large mixing bowl, cream butter and sugar until light and fluffy
- Butterscotch Glaze:
- 1 cup butter, softened
- 2 cups sugar
- 6 eggs
- 3 t. rum extract
- 1 t. vanilla extract
- 3 cups all-purpose flour
- 1 t. baking soda
- 1 t. baking powder
- 1 cup (8 oz.) sour cream
- 1 pkg. (3.4 oz.) instant butterscotch pudding mix
- 3/4 cup butterscotch ice cream topping
- 1/4 cup butter, cubed
- 1/4 cup packed brown sugar
- 2 T. milk
- 1 cup powdered sugar
- 1 t. vanilla extract
- 1/4 cup chopped pecans
Homemade Mayonnaise

Put egg, seasonings, and ¼ cup oil in the blender and whirl until well mixed (20 to 30 seconds)
- 1 egg
- ½ t. dry mustard
- ½ t. salt
- 2 T. lemon juice or vinegar
- 1 ½ cups oil

- Two cups of flour
- 1 tablespoon of baking powder
- 1 teaspoon of sugar (can add more to taste)
- 1/2 teaspoon of salt
- 1 stick of butter, cold (8 tablespoons)
- 3/4 cup of buttermilk, cream or half-and-half

- 1 box chocolate cake mix
- 1 cup mayonnaise
- 1 cup water
- 3 eggs
- 1 t. ground cinnamon (optional)
