Slow Cooker Bolognese Sauce

Melt butter in a large pan over medium heat
- 1 T. unsalted butter
- 1 small onion, chopped
- 1 celery rib, finely chopped
- 1 carrot, finely chopped
- 2 lbs. lean ground beef
- Salt and pepper
- Pinch of nutmeg
- 1 cup whole milk
- 1 cup white wine
- 2 cans (28 oz.) crushed tomatoes
Artichoke Dip

Combine all ingredients and mix well
- 1 can (15 ½ oz.) artichoke hearts, drained and chopped
- 1 cup Parmesan cheese
- 8 ounces mozzarella cheese, grated
- 1 cup mayonnaise

Creamy Slow Cooker Tortellini Soup

Combine spaghetti sauce, spinach, cream cheese, chicken broth, and mushrooms in a slow-cooker
- 6 cups of your favorite homemade meaty spaghetti sauce or 24 oz jar prepared spaghetti sauce + 1/2 lb browned ground beef + 1/2 lb browned Italian sausage
- 1/2 bag (4.5 oz) fresh spinach leaves
- 4 C chicken broth
- 8 oz cream cheese
- 8 oz sliced fresh mushrooms
- 16 oz frozen cheese tortellini
Almond Biscotti

Preheat oven to 325 degrees
- Variations:
- 2 3/4 cups all-purpose flour
- 1 1/2 t. baking powder
- 1 t. salt
- 1 1/2 cups sugar
- 2 eggs
- 2 egg yolks
- 6 T. butter, melted
- 1 1/2 t. finely shredded orange or lemon peel (optional)
- 1 cup coarsely chopped almonds
- Hazelnut biscotti - use orange peel and substitute 1 cup chopped hazelnuts instead of almonds
- Pistachio biscotti - use lemon peel and substitute 1 cup chopped pistachios instead of almonds
- Cashew-Chocolate biscotti - omit peel and substitute 1/2 cup chopped cashews and 1/2 cup finely chopped bittersweet chocolate for the almonds

Preheat oven to 400 degrees
- 1/4 cup frozen chopped onion
- 2 garlic cloves, crushed
- 8 oz. sliced or whole mushrooms
- 2 small zucchini, diced
- 2 cans (14.5 oz.) crushed tomatoes
- 1 T. Italian seasoning
- 1/2 t. salt
- 1/2 t. ground black pepper
- 1/2 t. sugar
- 1 rotisserie chicken, deboned and broken into chunks
- 1 pkg. (8 oz.) finely shredded Italian cheese blend or mozzarella, divided
- 1 pkg. (9 oz.) fresh pasta, uncooked
