Creamy Crockpot Hot Chocolate

- 1 1/2 cups heavy cream
- 1 can sweetened condensed milk
- 2 cups milk chocolate chips
- 6 cups of milk
- 1 t. vanilla
Carrot Cake

CAKE: Preheat oven to 350
- FROSTING:
- 2 1/2 cups flour
- 1 1/2 cups sugar
- 4 t cinnamon
- 1 t salt
- 1 1/2 t baking soda
- 4 eggs, lightly beaten
- 1 t vanilla
- 1 cup canola oil
- 3 cups grated carrots
- 1/2 cup raisins
- 16 oz. cream cheese, room temp
- 2 sticks butter, room temp
- 3 t vanilla
- 2 cups powdered sugar
- 1/2 cup chopped pecans (optional)
Cajun Potato Salad

Cook the potatoes in boiling, salted water for 20 to 30 minutes or until tender; drain
- 2 lbs. small red potatoes
- 1/2 cup chopped red onion
- 1/2 cup sliced green onion
- 1/4 cup minced fresh parsley
- 6 T. cider vinegar, divided
- 1/2 lb. smoked sausage, sliced
- 6 T. olive oil
- 1 T. Dijon mustard
- 2 garlic cloves, minced
- 1/2 t. pepper
- 1/4 to 1/2 t. cayenne pepper
Apricot Walnut Loaf

- 2/3 cup dried apricots, chopped
- 1/2 cup dark raisins, chopped

- 3/4 cup powdered sugar
- 1/4 t. to 1 T. rum (can substitute vanilla extract)
