Strawberry Lemonade Scones

1. Preheat oven to 400 degrees F
- Topping:
- 2 1/2 cups of all-purpose flour*
- 2 tablespoons sugar
- 1 tablespoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter (chilled, not softened), cut into cubes
- 1 cup diced fresh strawberries
- 1/2 cup freeze-dried strawberries
- 1 generous tablespoon lemon zest
- 2 eggs, beaten
- 1/2 cup heavy cream

- Prepared lemon curd
White Chocolate Chip Cheese Ball

Beat together cream cheese, butter and almond extract until fluffy
- Garnish:
- 8 oz. pkg. cream cheese, softened
- 1/2 cup butter, softened
- 1/2 t. almond extract
- 3/4 cup powdered sugar
- 1 cup white chocolate chips
- 1/2 cup sweet dried cherries, chopped
- 3/4 cup sliced almonds, lightly toasted
- white chocolate curls and sweet, dried cherries
Twix Cheesecakes

Preheat the oven to 275 degrees F
- Crust
- 1/2 package Oreos (20 Oreos)
- 1 Tablespoon sugar
- 1/4 cup unsalted butter, melted
- Cheesecake Batter
- 1 pound cream cheese, softened
- 1/2 cup sugar
- 1/2 teaspoon vanilla extract
- 2 large eggs, lightly beaten
- 1/2 cup sour cream
- 12 mini Twix bars, chopped into small pieces (I use the Fun Sizes Twix Bars)

Pumpkin Spice Cake

- 1 box yellow cake mix
- 1 pkg. (4-serv) vanilla instant pudding mix
- 1 cup canned pumpkin
- 1/2 cup oil
- 1 1/2 cups water
- 3 eggs
- 1 1/2 t. ground cinnamon
- 1 t. ground cloves

Honey Dijon Chicken

Place chicken in an ungreased 11x7x2" baking dish
- 4 boneless skinless chicken breast halves
- 1/4 cup honey
- 2 T. lemon juice
- 2 T. soy sauce
- 1 t. Dijon mustard

- Carrot ribbons:
- 1 1/2 cups all-purpose flour
- 3/4 cups granulated sugar
- 1/2 cup light brown sugar
- 1 t. baking powder
- 1 t. baking soda
- 1 t. salt
- 1 t. cinnamon
- 1/2 t. allspice
- 2 large carrots, peeled and grated
- 3/4 cup golden raisins
- 1 cup finely chopped walnuts
- 2 large eggs
- 3/4 cup vegetable oil
- 1/3 cup whole milk
- 1 t. vanilla
- 1 large carrot, peeled
- 2 cups sugar
- Frosting:
- 8 oz. cream cheese
- 4 T. unsalted butter
- 2 cups powdered sugar
- 1 t. vanilla
- 3 T. simple syrup (reserved from ribbons)
Cheesy Potatoe Casserole

Mix soup, sour cream, salt, pepper, green onions and cheese in a large mixing bowl
- 1 (30 oz.) bag Ore-Ida Country Style Hash Browns
- 1 can cream of chicken soup
- 2 cups sour cream
- 1 1/2 t. salt
- 2 cups grated cheddar cheese
- 1/4 t. pepper
- 3 green onions, chopped
- 2 cups crushed corn flakes
- 1/4 cup butter, melted
Chocolate Oatmeal Cookies

- 2 cups butter
- 2 cups sugar
- 24 oz. chocolate chips
- 1 (8 oz.) Hershey bar, grated
- 4 cups flour
- 5 cups blended oatmeal
- 2 cups brown sugar
- 4 eggs
- 2 t. soda
- 2 t. baking powder
- 1 t. salt
- 2 t. vanilla
- 3 cups chopped nuts (your choice)
