Ratatouille Roasted

1 Preheat the oven to 400°F
- 1 large sweet or purple onion, skinned and chopped
- 5 cloves garlic, roughly chopped (find fresh garlic with green stems in the summer!)
- 1 radicchio (optional), chopped
- 2 bulbs fennel, peeled and chopped
- 1 large (firm and heavy) eggplant, cubed
- 1 lb. green beans (optional), tailed (meaning: chop off the tails, but not the tops!) and cut in half
- 5 green or yellow zucchini (or any summer squash), cubed
- 8 fresh roma (plum) tomatoes, cubed (feel free to score, blanch and peel if you desire)
- 5 new potatoes (Yukon Gold or small red Bliss), halved or quartered
- 1 large bunch basil, washed well and torn into bite- sized pieces (smaller leaves can be left whole)
- 11 ⁄2 cups (approximately) extra-virgin olive oil
- Freshly ground black pepper
- Kosher salt or coarse sea salt
- 8 ounces tomato sauce or tomato puree (optional)
Avocado Salad (Estee Lightstone)

Just note: there are no quantities here- so you either make a big one or a small salad, whichever you prefer
- Hearts of Palm
- Purple Onion
- Corn
- Honey Glazed Almonds (chopped)
- Avocados
- Dressing: (makes alot, can 1/2 it, but its also a good one to keep in fridge)
- 1 C Mayo
- 1/2 C Sugar
- 1/4 C vinegar
- 1 tbsp mustard
- garlic powder (or sometimes i'll throw in a frozen garlic cube- i like the taste)
Rosemary Choc Brownies (Nechama Landau and Tova Fruchter)

Place in 9 x 13 pan Chop up one bar of rosemary chocolate and place on top Bake for 35-40 min at 350 degrees L
- 2 sticks margarine melted
- 2 cups sugar
- 4 eggs
- 1 tsp vanilla
- 1/2 cup flour
- 1/2 tsp salt
- 1 cup cocoa
Onion Mushroom Quiche

slice mushrooms dice onions saute onions and mushrooms in 2 tbs oil add rest of ingredients except bread crumbs
- 2 lbs mushrooms (I usually do 1 pound portabella and one pound white)
- 2 large onions
- 4 eggs
- 4 tbs oil (vegetable or canola)
- 2 tbs light mayonnaise
- 1 tsp onion soup mix (optional)
- salt/pepper/garlic powder to taste
- flavored bread crumbs
ZUCCHINI BREAD (SUSHIE)

1. wash and cut off ends of zucchini and put in food processor
- 1 1/4 cup oil
- 3 eggs
- 1 1/2 cups sugar
- 2 tsp vanilla
- 4 cups grated zucchin3-4 zucchini)
- 4 cups flour
- 4 tsp baking soda
- 2 tsp baking powder
- 2 tsp salt
- 2 tsp cinnamon
- 1 cup chopped nuts (walnut or almond)

- 1/3 cup margarine-melted
- ½ cup brown sugar
- ½ cup ground almonds or walnuts

- ½ tablespoon vanilla extract

- 1 stick margarine
- ¼ cup bittersweet chocolate
- 2 eggs beaten
- ¾ cup confectioner’s sugar
- ¼ cup cocoa powder
- 1 tsp vanilla extract
- coffee whip topping
- 8 ounces whip topping
- 2 tsp vanilla
- 2 tbs coffee
- coffee liquor
Cinnamon Cake with Crumble

bake 375 for 10 minutes bake 350 for 35 to 40 minutes until tester comes out clean
- Three eggs
- 1 cup oil
- 1 1/2 cup sugar
- 1 teaspoon vanilla
- 1/2 orange juice
- 2 1/2 cups of flour
- 2 teaspoons of baking powder
- beat
- pour Half into bundt pan
- 3 tablespoons of sugar, 1/2 teaspoon cinnamon- mix and and pour over batter
- make topping
- 1/3 cup flour
- 1 teaspoon cinnamon, half cup sugar, half a stick of margarine melted- form into crumbs and put on top of cake

- 1 cup brown sugar
- 1 cup sugar
- 2 eggs
- 11/2 tsp baking powder
- 1 tsp baking soda
- 1 tsp salt
- 2 cups chocolate chips
- 1 cup chopped toasted hazelnuts
- 3 cups whole grain flour
