Ingredients
- 1 1/4 cup oil
- 3 eggs
- 1 1/2 cups sugar
- 2 tsp vanilla
- 4 cups grated zucchin3-4 zucchini)
- 4 cups flour
- 4 tsp baking soda
- 2 tsp baking powder
- 2 tsp salt
- 2 tsp cinnamon
- 1 cup chopped nuts (walnut or almond)

Preparation
Step 1
1. wash and cut off ends of zucchini and put in food processor. Drain off excess water
2. beat eggs, oil, sugar and vanilla
3. sift dry ingredients and add to mixture
4. add nuts and zucchini, mix a little but not much more
