Honey Pecan Butter

Blend butter, honey and pecans in food processor until smooth
- 1/2 cup well-chilled, unsalted butter, cut into 4 pieces
- 1/4 cup honey
- 1/3 cup pecans, toasted
Never Fail Divinity

Beat egg whites until stiff and set aside
- 2 1/2 cups white sugar
- 1/2 cup light corn syrup
- 1/2 cup boiling water
- 2 egg whites
- 1 tsp. vanilla
- 3/4 cup chopped black walnuts
CHOCOLATE BUTTERCREAM FROSTING

- 2 2/3 CUPS CONFECTIONERS SUGAR
- 1/2 CUP COCOA
- 1/3 CUP MILK
- 1 1/2 TEA. VANILLA
Baked Apples with Caramel Sauce

Preheat oven to 325 degrees
- Caramel Sauce:
- 6 same-size Granny Smith apples
- 1 tsp. cinnamon
- 1/4 tsp. nutmeg
- 1/2 cup sugar
- 2 tbsp. butter
- 1 cup apple juice
- 6 sprigs fresh mint
- 8 tbsp. (1 stick) butter
- 1 cup light brown sugar
- 1/4 cup evaporated milk
- 1/2 tsp. vanilla
Mile High Shredded Beef Sandwiches

1. In skillet brown both sides of meat in oil
- 3 lb. chuck roast, or round steak
- 2 tbsp. oil
- 1 cup chopped onions
- 1/2 cup sliced celery
- 2 cups beef broth, or bouillon
- 1 garlic clove
- 1 tsp. salt
- 3/4 cup ketchup
- 4 tbsp. brown sugar
- 2 tbsp. vinegar
- 1 tsp. dry mustard
- 1/2 tsp. chili powder
- 3 drops tabasco sauce
- 1/4 tsp. paprika
- 1/4 tsp. garlic powder
- 1 tsp. worcestershire sauce
Panfried Fish

If fish fillets are large, cut into 6 serving pieces
- Lean Fish:
- 1 1/2 lb. lean fish fillets or pan dressed fish
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 1 egg
- 1 tbsp. water
- 1/2 cup flour, cornmeal, dry bread crumbs or grated Parmesan cheese
- Vegetable oil
- flounder, halibut, cod, grouper, orange roughy
Green Bean Bake

In 1 1/2 qt. casserole, combine 1/2 can onions and remaining ingredients
- 1 can French fried onions
- 1 can campbells cream of mushroom soup
- 1/2 cup milk
- 1 tsp. soy sauce
- dash pepper
- 2 pkg. (9oz. each)frozen cut green beans, cooked and drained
Pumpkin Bars

Preheat the oven to 350 degrees
- Icing:
- 4 eggs
- 1 2/3 cups granulated sugar
- 1 cup vegetable oil
- 15 oz. can pumpkin
- 2 cups flour
- 2 tsp. baking powder
- 2 tsp. cinnamon
- 1 tsp. salt
- 1 tsp. baking soda
- 8 oz. package cream cheese, softened
- 1/2 cup butter, softened
- 2 cups confectioners sugar
- 1 tsp. vanilla extract
Chunky Applesauce

1. Combine all ingredients in slow cooker
- 8 apples, peeled, cored, and cut into chunks or slices (6 cups)
- 1 tsp. cinnamon
- 1/2 cup water
- 1/2 to 1 cup sugar, or cinnamon red hot candies
Cauliflower Gratin

- 3 tbsp. olive oil
- 1 large onion, chopped
- 1 28 oz. can diced tomatoes, drained
- 1 15 oz. can chick peas drained ( garbanzo beans)
- 1 tbsp. garlic minced
- 1/4 cup chopped parsley
- 2 tbsp. capers, drained and rinsed
- 1 tbsp. fresh oregano chopped
- Juice of 1/2 lemon 1 tbsp.
- 1 tsp. fresh thyme chopped
- 1/2 tsp. kosher salt
- 1/4 tsp. fresh ground black pepper
- 1/8 tsp. cayenne pepper
- 1 head cauliflower
- 4-6 oz. feta cheese, crumbled
