Biscuit-Topped Chicken Potpie

Preheat oven to 375 degrees
- 4 buttermilk biscuits
- 4 tsp grated Parmesan cheese
- 1 tbsp butter
- 1/4 c. finely chopped shallot (2 medium)
- 2 cloves garlic, minced
- 3 c. frozen mixed vegetables
- 1 (12 ounce) jar chicken gravy
- 1/2 c. skim milk
- 1/4 c. sour cream
- 1 tbsp fresh thyme leaves
- 1/4 tsp ground black pepper
- 1 rotisserie chicken, skin removed, deboned and shredded

Mix all the ingredients together in a large bowl, making sure everything is very well combined
- 3/4 cup rolled oats
- 1/4 cup unsalted, roasted sunflower seeds
- 1/4 cup dried cranberries, roughly chopped* (I used Cherries)
- 1/4 cup dried carob chips, roughly chopped*
- 2 tablespoons ground flaxseed
- 1/2 teaspoon kosher salt
- 3/4 cup peanut butter (I used chunky)
- 1 tablespoon honey
- 1/2 teaspoon vanilla extract
- Feel free to substitute any dried fruit you like, totaling 1/2 cup.
- I've also used dark chocolate and coconut

Make Ahead Tips You can cook the pasta a few hours ahead, run cold water over it, and drain
- 1/2 cup mayonnaise (homemade or store bought)
- 1/2 cup sour cream
- 1/2 cup buttermilk, well shaken
- 1/4 cup thinly sliced chives
- 1 Tbs. chopped fresh dill
- 2 tsp. minced garlic (2 medium cloves)
- 2 tsp. minced shallot
- 2 tsp. fresh lemon juice

- 1 pound shaped pasta, such as fusilli, farfalle, or cavatappi
- 1/4 cup thinly sliced scallions, white and pale green parts (about 3)
- 3 oz. ricotta salata, coarsely grated (about 3/4 cup)
- 4 oz. mâche or baby spinach leaves, stems trimmed if necessary, washed and dried (4 cups)

- For serving:
- 3 to 4 cups chicken stock, preferably homemade
- 1 quart Roasted Winter Vegetables, recipe follows
- Kosher salt and freshly ground black pepper
